Young potatoes are a great summer side dish that is very easy to prepare. It goes well with any dish: meat and fish garnishes, fresh vegetable salad and sautéed summer vegetables. This simple side dish is prepared in different ways. It is seasoned with onion frying, sprinkled with herbs, seasoned with garlic, poured with sour cream, butter, etc. Any options are delicious, so you need to try everything in time for the season. Today we will learn how to cook delicious young potatoes with garlic and herbs. Before starting cooking, I will add a few words on how to cook tubers correctly. Note that these rules apply to both new potatoes and old potatoes. Moreover, young potatoes contain significantly less starch than mature ones.
- For the recipe, it is better to choose small tubers so as not to cut them into pieces, so they look better and cook at the same time.
- If the tubers are the youngest, then peeling them is not necessary. It contains many useful substances.
- Put the peeled potatoes in boiling water. Because starch will mix with cold water, and turn into a paste in hot water. A starchy film forms around the potato, which will retain useful substances inside the potato.
- Boil the tubers in water so that they cover them by 1-2 fingers.
- The water should not boil too much.
- Do not close the pot tightly.
- You need to salt the potatoes, depending on the variety and purpose. The salt interacts with the potato starch, and under its influence the potatoes are denser. If you salt the tubers at the beginning of cooking, you get a dense potato. This option is suitable if the potatoes are very soft or you need them for a salad. If the tubers are not prone to overcooking or want to make mashed potatoes, then it is better to salt them by the end of cooking.

- Young potatoes - 500 g
- Salt - 2/3 tsp or to taste
- Garlic - 2-3 cloves
- Butter - 25 g

Step by step cooking delicious young potatoes, recipe with photo:
1. Wash the potatoes and put them in a cooking pot with boiling water. I do not peel the tubers, because the skin is very thin. Scrape it with your finger, if it comes off easily, then the potatoes are still young. If the peel comes off with difficulty, then it is better to peel it. But remember that young potatoes stain your hands. Therefore, clean it with rubber gloves.
2. After boiling, cook the tubers for about 20 minutes. Check readiness with a puncture of a knife or fork: the device should easily enter. For cooking, select tubers of approximately the same size so that they cook at the same time. Remember to add salt to the potatoes following the tips above.
3. Remove the cooked potatoes from the boiling water and arrange in portions. Put a piece of butter in each plate, add finely chopped or pressed garlic and sprinkle with chopped herbs. Tasty young potatoes should be eaten hot immediately after cooking.
