There are many recipes for mushroom sauces; they are often based on sour cream or cream. To prevent dairy products from curdling when heated, flour is added to the sauce, it is a natural thickener. European chefs use parisienne as a base for the sauce, and egg yolks and high-fat cream for thickening. Then the mushrooms are fried separately, and then added to the ready-made sauce. In our country, mushroom dishes are associated with fasting. On such days, you can make a lean or vegetarian mushroom sauce. Then it will be enough to replace animal products (butter, milk, cream) with vegetable ones (vegetable broth, mashed tomatoes, mushroom broth).
It is appropriate to supplement the mushroom sauce with alcoholic beverages, like white or red wine, rum or cognac. Black and white pepper, basil, parsley, thyme, dill, garlic, lemon juice are harmoniously combined from spices. You can also add cheese to the dish. Mushroom sauce is suitable for any second course. Ingredients:
- Champignons - 500 g
- Butter - 20 g
- Wheat flour - 2 tablespoons
- White wine - 150 ml
- Sour cream - 150 ml
- Onions - 1 pc.
- Garlic - 2 cloves
- Salt - 1 tsp or to taste
- Refined vegetable oil - for frying
- Ginger powder - 1 tsp
Making wine and mushroom sauce
1. Melt the butter in a skillet and add chopped onions and garlic to fry. Clean and wash the spices first.
2. Saute the onion over medium heat until transparent. Make sure that it does not burn.
3. Add mushrooms to the pan. Wash them first and dry well, then chop them. The cutting method can be any: straws, shredders, cubes. Choose which one you like best.
4. Fry the food over medium heat so that the mushrooms are slightly golden.
5. Add sour cream to the pan and pour in the wine.
6. Add spices (pepper, ginger) and salt. You can add your favorite spices if you like.
7. Stir food evenly and add flour.
8. Bring food to a boil, reduce temperature, cover and simmer. The cooking time for the sauce may vary. It depends on what consistency you want it to be. If you want more liquid, boil for 15 minutes to make it thick, keep on fire longer.
9. Ready-made mushroom sauce can be served both warm and chilled. This is already a matter of taste and preference. Any cereals, boiled potatoes, spaghetti are perfect for a side dish, and you can simply put it on a slice of a bun.
