Pour the infusion into a saucepan, let it boil, add 1 tbsp. l. sugar and cook for 5 minutes. Cool, leave to marinate for a day. In the morning they filter, bottled, and you can already use it.
- Of wine … To prepare raspberry vinegar, the acidified wine is poured into a glass jar (together with the precipitated sediment), the volume of which is 5 times larger than the amount of the original ingredient, and diluted with warm boiled water in a 1: 3 ratio. Stir in 300 g of sugared honey and leave in a dark place for fermentation, shaking occasionally for 10 days 2 times a day, another 10 - 1 times, the remaining time 1 time in 2-3 days. The duration of fermentation is 50-55 days. At the end of fermentation, the product is filtered.
- From juice … The already slightly spoiled fermented berries are squeezed out, the juice is poured into a glass jar. A piece of rye bread soaked in apple cider vinegar is dipped into it. The neck is closed with gauze folded in several layers, and removed for 4-4, 5 weeks in a dark place, stirring occasionally. When fermentation is over, filter and put in a cold place, bottling in dark glass bottles.
- Yeast recipe … Frozen raspberries, 300 g, are put to thaw, draining the water as necessary. Balsamic vinegar, 360 ml, bring to a boil, dissolve 160 g of white sugar in it and pour the berries until the liquid has cooled. Stir in 1 tbsp. l. dry fast yeast. Leave under gauze folded in several layers for 2 days at room temperature. Strain the juice, wash the cake with a little water and squeeze it into juice. Leave for another 2 days, and then filter and pour into glass containers.
- From concentrate … Stir food concentrate into balsamic, apple or ordinary table vinegar, 6%, let stand for 1-2 hours, filter and cool.
- Self-fermentation recipe … 800 g of berries are poured into a glass jar with a volume of 3 liters, slightly crushed so that the juice stands out. Pour sugar, 100 g, and pour warm water, 1 liter. Close the neckline with a cotton cloth and put it in a dark, warm place for 10 days. Stir 2-3 times a day with a wooden stick or spoon. A film will form on the surface - a vinegar uterus. Already for 2-3 days, when shaking it, it is better not to break it, but to bend it and stir it under it. In the future, it can be transferred to another dish, like kombucha, to speed up the preparation of raspberry vinegar. After 10 days, you no longer need to interfere. The contents of the jar are left to ferment for another 2 weeks. The only thing that is needed is to periodically change the gauze on the neck if an unpleasant odor appears. Filter the cloudy liquid, pour it back into the jar and remove it to infuse for another 2 weeks. During this time, a precipitate forms. The filtration is repeated, the liquid is poured into glass bottles. The food product is ready.
