Some tips for making delicious cutlets

To make the cutlets juicy, the minced meat must be twisted through a large wire rack on your own. But at the same time, it is desirable that a small part of the meat be fat. In it, the cutlet will be fried, which will significantly soften the meat fibers and prevent the dryness and hardness of the dish. But if lean meat is used, then you can additionally twist a small piece of bacon. Another secret is the water that needs to be poured into the minced meat. During cooking, it converts into broth and stays inside the patties, making them juicier.

In order to avoid sticking of cutlets to the pan, the minced meat must be mixed well before frying, or even beaten off. This is an important technological manipulation that will make the mass more elastic and keep it in one piece. You need to fry tunics only in good heat and without a lid. The high temperature forms a crust on them, which will keep the fat and juice inside, and of course, will prevent the cutlets from sticking.

  • Pork - 1 kg
  • Onions - 2 pcs.
  • Garlic - 3 cloves
  • Potatoes - 1 pc.
  • Egg - 1 pc.
  • Mayonnaise - 2 tablespoons

  • Sunflower seeds - 100 g
  • Salt - 1.5 tsp or to taste
  • Ground black pepper - 0.5 tsp or to taste
  • Refined vegetable oil - for frying

1. Wash the meat and pass it through the large wire rack of a meat grinder.

4. Stir the minced meat well. Then knock it out. This is done as follows. Take the minced meat with both hands, lift it from the plate to a height of about 30-50 cm and throw it back. Repeat this process about 5 times.

5. Place the pan on the stove, add oil and heat well. When a strong heat emanates from the pan, it means that it is ready for frying cutlets. Take a heaped portion of minced meat with a tablespoon. Transfer it to your hands and form round or oval cutlets, which you can put in a frying pan. Set the temperature above average.

6. Fry cutlets on one side until golden brown, about 5 minutes. Then turn over and cook for the same amount of time. If you want the cutlets to steam a little, then reduce the heat to lowest, cover the pan with a lid and simmer them for 5 minutes. The dish is ready and you can serve it to the table.
