General principles of cooking meatballs in the oven
Meatballs - delicious aromatic meat balls stewed in tomato, sour cream or mixed sauce! Cooking them in the oven is quite simple, and most importantly quickly. Just 30-40 minutes, and a hearty, healthy dish is ready. The basis of meatballs is meat, which is rich in essential protein for the full functioning and renewal of the human body. In addition, cereals are added to the meatballs, which increases their nutritional and energy value.
Any meat can be used for meatballs: pork, beef, poultry … Of cereals, rice is mainly used. But it can be replaced with buckwheat or pearl barley. Meatballs are usually served neat with the sauce in which they were stewed.
The main secrets of cooking meatballs
- For meatballs to be especially tasty, cook them with fresh, non-frozen and lean meat.
- To enhance their taste, you can put any vegetables in the minced meat: bell peppers, zucchini, tomatoes, beans, peas. They will create a shade of taste, add juiciness and loosen the structure, due to which the dish will cook faster.
- To keep the meatballs well, add binding products - starch, eggs, flour, mashed potatoes.
- Shape the meatballs with your hands moistened with cold water, then they will not stick to your palms.
- Rice in meatballs can be put raw or boiled. In the first case, in the process of cooking meatballs, the rice will swell and its rice will stick out from the meatballs, resembling hedgehogs.
- Meatballs are prepared and dishes with high sides so that they can be laid in one layer. A heat-resistant glass container is suitable for cooking them in the oven.

Ingredients:
- Pork - 1 kg (any sort)
- Rice - 150 g
- Onions - 1 pc.
- Garlic - 2-3 cloves
- Tomato paste - 3 tablespoons
- Tomatoes - 4 pcs.
- Bay leaf - 3-4 pcs.
- Allspice peas - 5-6 pcs.
- Salt to taste
- Ground black pepper - to taste
- Ground nutmeg - 0.5 tsp
- Ground ginger - 0.5 tsp
Cooking meatballs in the oven
1. Wash the pork under running water, dry and cut off all the veins and film. Remove fat, if present, if desired. Place a grinder with a medium mesh grill and pass the meat through it.
2. Peel the onions, wash and twist through a meat grinder and through the same wire rack.
3. Season the minced meat with spices, pepper and salt. Also add uncooked rice, rinse well with water, changing it about 3-4 times. In this case, I used raw rice, but you can boil it until half cooked if desired.
4. Stir the minced meat well.
5. Form small balls and place in an ovenproof ovenproof dish. This can be a glass, earthenware or ceramic baking sheet.
6. Now prepare the gravy. Place the washed and quartered tomatoes, peeled and finely chopped garlic, tomato paste, bay leaves, peppercorns, salt and black pepper in a skillet.
7. Fill everything with water, place on the stove and boil for about 15 minutes.
8. Pour the prepared gravy over the meatballs. Cover the dish with a lid or wrap in baking foil. Heat the oven to 200 degrees and send the meatballs to bake for 40–45 minutes. Serve the prepared meatballs hot. You don't need to cook any side dish for them, since the meatballs are quite satisfying due to the fact that they contain rice.
