Ingredients:

  • Silver carp - 800-1000 g
  • Onions - 3-4 pcs.
  • White bread - 3 slices
  • Salt - 1 tsp
  • Egg - 3 pcs.
  • Milk or water - for soaking bread
  • White pepper and ground bay leaf
  • Hard cheese - 100-150 g
  • Dill and / or parsley with green onions - to taste
  • Garlic - 3 cloves

1. The fillet is separated from the bones and rolled in a meat grinder. To get a more delicate consistency, you can use the blender, setting it to the "Turbo" mode. Do the same with onions.

2. Bread is pre-soaked in milk and then chopped with a regular fork. Then add a teaspoon of salt, a little white pepper and ground bay leaf. All ingredients are combined and mixed thoroughly.

3. Cutlets during frying will not disintegrate if you add a raw egg or one tablespoon of starch to the minced meat. You can stop at this stage, form small round cutlets, use breadcrumbs, and then bake in the oven or fry in a pan.

4. Having somewhat complicated the technology, we get a more refined flavor combination. You need to grate 100-150 g of hard cheese, mash two boiled eggs with a fork. Add a little chopped garlic and any herbs to these products. You can do without salt, there is enough of it in the cheese.

5. From the minced meat we form an elongated flat cake, in the center we place a tablespoon of the filling. The edges should be neatly connected, the cutlet should resemble a rhombus in shape. Sometimes breadcrumbs are mixed with sesame seeds. By the way, you get an original taste if you take fresh bread crushed on a grater instead of crackers.
