The meat filling for pancakes is made from raw meat, which can be used in any way: pork, beef, chicken, veal. There are several ways to prepare the filling. For example, meat can be fried in a pan, boiled in a saucepan, or baked in an oven. After heat treatment, it usually twists. To make the filling juicier, fried onions must be added to it.
All of the above methods are good. In this recipe, I suggest boiling the meat. This is the best option for the juicy filling. I use pork in this recipe. But other types can be used to taste. A similar filling is suitable for pancakes baked on any dough. However, you shouldn't cook sweet pancakes with salty filling.
You can supplement minced meat with different products to taste. For example, grilled carrots or mushrooms, finely chopped olives, corn kernels, grated cheese, and more work well. Pancakes with meat are served on their own, for example, with a cup of tea. However, they will also work well with a quote or garlic sauce.

How to make meat filling for pancakes
1. Wash the meat, remove fat and film and cut into pieces. The slices should be medium in size. Place the meat in a cooking pot.
2. Add one peeled onion, one garlic clove, bay leaf, peppercorns and cloves to the meat.
3. Fill the food with drinking water and place it on the stove. As soon as the water boils, turn the heat to low and use a spoon or slotted spoon to remove the foam that has formed.
4. Cook the meat for about 40-45 minutes over a shallow heat until tender. Season it with salt and ground pepper 15 minutes before the end of cooking.
5. Meanwhile, peel the remaining onions and garlic. Wash them, dry and chop them. Heat a frying pan, pour vegetable oil into it and send onion and garlic to sauté.
6. Fry vegetables over medium heat until light golden brown. Do not fry the onion too much, otherwise it will become dry.
7. Cool the boiled meat and fried onions. Place a meat grinder with a medium wire rack and twist the food.
8. Pour the broth in which the meat was cooked to the twisted minced meat. Adjust its amount yourself. Pour in 50 ml first and stir. Then add a little bit of it as needed. Bring the filling to the consistency you like.
9. Add spices and spices to the minced meat to taste. For example, I prefer ground nutmeg. Also add some black pepper.
10. Stir the minced meat and you can stuff the pancakes with it. For the sake of fairness, I note that such a filling can be used for pies, pies, pizza, etc.
