Eggplant is a versatile vegetable. They can be fried, stewed, canned, and are also ideal for stuffing. Their flesh is perfect for filling, and you can stuff them in several ways: rings, barrels or boats. Therefore, stuffed eggplant exists in almost every kitchen in the world.
Fruits are stuffed with any products. The dish can be made vegetarian by stuffing with vegetables: carrots, onions, bell peppers, tomatoes, potatoes, mushrooms, aromatic herbs, etc. Or you can use minced meat: pork, beef, chicken or mixed. To give the food a more attractive look, sprinkle the eggplant on top with grated cheese. If you don't really like fried cheese, then add it 15 minutes before the meal is ready, then it will melt a little and will be "stretching". But crispy cheese with a crust will keep the dish juicier better. And if the eggplants are very bitter for you, then sprinkle them with salt and leave for half an hour, and then rinse them with running water. By the way, you can cook zucchini by the same principle. This vegetable is also suitable for filling and goes well with many foods.

- Meat - 300 g
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves
- Cilantro greens - small bunch
- Cheese - 100 g
- Mayonnaise - 20 g
- Vegetable oil - for frying
- Salt - 2/3 tsp or to taste
- Ground black pepper - 1/3 tsp or to taste
Cooking eggplant stuffed with meat
1. Wash and dry the eggplants under running water. Cut them lengthwise into 2 parts and, if necessary, remove the bitterness from them. This is easy to do, just sprinkle the pulp with salt and leave for 30 minutes. After this time, rinse and dry the fruits. Then, carefully remove the pulp from the eggplant so as not to damage the peel, which is cut into small cubes.
2. Wash the meat and cut into small cubes. The variety of meat can be anything you like.
3. In a frying pan in vegetable oil, fry the meat and eggplant pulp until half cooked.
4. Add finely chopped herbs, garlic squeezed through a press, salt, pepper and soy sauce to the filling products.
5. Stir the food well.
6. Fill the eggplant boats with the filling and pour mayonnaise over it. You can adjust the amount of mayonnaise yourself. In addition, it can be replaced with sour cream.
7. If you like a crispy cheese crust, then sprinkle the eggplants with cheese right away, if you like pulling, then add the cheese after 20 minutes of baking.
8. Heat the oven to 180 degrees and bake the snack for about 40 minutes. Check the readiness of the dish when the eggplant is ready. the filling is almost cooked through during frying. Pierce the flesh of the vegetable with a toothpick, if it comes in easily, then the dish is ready and can be served.
