If you like fried cheese with a crispy crust, then put it directly on the filling and send it to the oven. In this case, the filling will retain its juiciness better. And if you like "stretching" cheese, then add it 15 minutes before the dish is ready.

Step by step cooking stuffed eggplant with minced meat, recipe with photo:
1. Wash and dry the eggplants with a paper towel. Cut off the ponytails and cut the fruit in half lengthwise. At this stage, you need to decide whether you will remove bitterness from the blue or not. It is usually found in ripe fruits, but not in young ones. Therefore, if the vegetable is old, then sprinkle the cuts with salt and leave for half an hour. During this time, droplets of moisture will appear on the surface of the eggplant, along with which all the bitterness will come out. Then rinse them under running water and dry with a paper towel.
Next, carefully clean the eggplant pulp with a knife, spoon or other convenient tools to make a "boat". Place them in a baking tray.
2. Cut the extracted pulp into small cubes.
3. In a skillet, heat the vegetable oil and fry the eggplant pulp until golden brown.
4. In another skillet in oil, fry the minced meat, stirring occasionally, for about 5 minutes, until it changes color.
5. Combine minced meat, fried eggplant, tomato paste, chopped basil, salt and black pepper in one frying pan. You can add any spices and spices to taste.
6. Stir the products and simmer for 3-5 minutes over medium heat.
7. Stuff the eggplant with minced meat.
8. Sprinkle the filling with cheese shavings and send the stuffed eggplants with minced meat to bake in a heated oven to 180 degrees for 25 minutes. If the peel of the blue ones is very dense, then pour a little water into the baking sheet so that it steams and becomes softer.
