Cilantro is a spicy-aromatic plant of the coriander family. The leaves of the herb are divided into wide lobes that resemble parsley, which is why the other name for this herb is Chinese parsley. But this is where the plant similarity ends. Parsley loses to cilantro in taste, because does not have a persistent aroma and taste. The fresh and pungent scent of the herb softens as it ripens, and accompanies many dishes of Georgian and Mexican cuisine. But the season for cilantro is very short and ends quickly, and with it an abundance of greens leaves our diet. Connoisseurs of cilantro want to consume it all year round, not just in summer. In order to pamper yourself with this herb all winter, it must be prepared for future use and properly stored in order not only to enjoy the taste, but also to receive health benefits. Drying green cilantro does not take a lot of time and effort. It is carried out in several ways: in the shade in well-ventilated rooms or in an oven at a low temperature. It can also be dried using an electric dryer. The dried herb is stored in a hermetically sealed container so as not to lose a drop of the spicy volatile aroma.

1. Sort the grass, removing the yellowed and rotten leaves. Cut off the roots, leaving the stems with leaves. The stems can also be dried and used in cooking. Rinse the sorted grass under cold water and dry with a cotton towel or leave on the countertop to dry naturally.

2. When the cilantro dries, chop it with a sharp knife on a board, but not very finely.

4. You can dry cilantro in an oven at a temperature of 60 degrees and a slightly open door. Drying time will take about 2 hours. Or put the baking sheet on the balcony in the shade, and cover it with a thin layer of gauze on top so that dust does not fall. Leave the cilantro for 2 days. Stir the grass several times while drying in any way so that it dries evenly.

Leaves of ready-made dried cilantro will disintegrate and crumble in your hands. If you dried it in the oven, remove it from the oven and leave it in the room to cool.
