With the arrival of summer, cold soups are very popular. And one of the most popular favorites of cold first courses of soups in Russian and Ukrainian cuisine is okroshka. Its history goes back many centuries, from which there are many recipes with a variety of ingredients. It is believed that traditional okroshka is prepared with natural bread kvass. However, not everyone loves such a dish. Therefore, as an alternative, today we will cook hearty okroshka with smoked meats, sausage and mustard.
Today we will fill okroshka with broth, and not ordinary, but smoked. Thanks to this, it will acquire satiety, richness and piquant taste. Although if this combination does not seem appropriate to you or you do not like it, then you can fill it with ordinary mineral water, and put the smoked meat in the dish in the form of a meat component. Okroshka also turns out to be hearty thanks to the addition of milk sausage. A large amount of meat products in one dish will saturate the body well. Additional products are the same as always: potatoes, cucumbers, green onions, herbs, eggs. For the dressing, I chose sour cream, which I will add with mustard. It will add a light piquant bitterness. You can also put some horseradish for spiciness and freshness. And since the broth is not acidic, vinegar, citric acid or lemon juice are usually added to okroshka.

Ingredients:
- Smoked chicken leg - 1 pc.
- Potatoes - 3 pcs.
- Salt - 1 tsp or to taste
- Citric acid - 0.5 tsp or to taste
- Green onions - bunch
- Milk sausage - 300 g
- Sour cream - 500 ml
- Cucumbers - 3 pcs.
- Parsley - a bunch
- Eggs - 5 pcs.
- Mustard - 50 g
- Dill - bunch
Step by step preparation of hearty okroshka with smoked meats, sausage and mustard, recipe with photo:
1. Wash potatoes and eggs and put them in a saucepan. Fill with cold water and send to cook on the stove. After boiling, turn the temperature down to the minimum setting and cook the food for 10 minutes. Then remove the eggs and place them in cold water to cool. Season the potatoes with salt and continue cooking for another 20-30 minutes until tender. Then chill it also well.
2. Wash the smoked chicken leg, fill it with drinking water and send the broth to the stove to cook. Adjust the saturation of the broth yourself depending on what kind of nutritious dish you want to get. You can make the broth light by boiling the ham for 20 minutes or saturated in 1 hour of cooking.
3. Chill the broth at room temperature, then put the pan in the refrigerator to freeze the fat on the surface.
4. Use a spoon or slotted spoon to remove the greasy film from the surface of the cold broth.
5. Remove the chicken leg from the broth.
6. Peel the potatoes and cut them into cubes, like for an Olivier salad. Send it to the stockpot.
7. Peel the eggs, cut and place in the broth.
8. Cut the sausage to the same size as the previous products and send to the broth.
9. Chop the chicken leg and send it to the broth.
10. Wash cucumbers, cut off the ends, cut into cubes and put in okroshka.
