Summer okroshka with sausage is a homemade simple, tasty and nutritious dish, which contains a lot of vitamins. The sausage recipe will make the dish more nutritious and satisfying. With sausage, you can cook okroshka on kvass, kefir, sour cream, water, whey, broth - whatever you like. Nobody will refuse a portion of cold okroshka with sausage, especially in the summer heat. Hot summer days are the best time to prepare a cold soup. This type of chowder is perfect for children, because they are very fond of sausage. But then I recommend boiling the sausage a little for about 5 minutes, or the sausage can be replaced with boiled chicken or beef. It is advisable to cool vegetables for okroshka in advance, then it can be consumed immediately after cooking.
Basic recipe ingredients: boiled potatoes, boiled eggs, fresh cucumbers, doctor's sausage, mustard, sour cream, mayonnaise, green onions, herbs and a liquid base. At the same time, okroshka is a gastronomic dish that can always be modified to your taste, which does not in any way affect the taste of the soup. You can replace and supplement products according to your taste. The issue of cutting products for okroshka is a debatable issue. There is an opinion that it is better to cut everything into large pieces in order to feel the taste of each product. Some are sure that the taste of the dish is revealed only with fine cuts. Therefore, each housewife can choose the cutting method that she likes best.

Ingredients:
- Sausage - 400 g
- Salt - 1 tsp
- Hard boiled eggs - 5 pcs.
- Drinking cold water - 3 l
- Green onions - bunch
- Boiled potatoes in their uniforms - 4 pcs.
- Fresh cucumbers - 3 pcs.
- Dill and parsley - bunch
- Citric acid - 1 tsp
- Mayonnaise - 200 ml
- Sour cream - 200 ml
- Mustard - 1 tablespoon
Step-by-step cooking of summer okroshka with sausage, recipe with photo:
1. Peel and dice chilled potatoes. I prefer to cut food for a dish with sides of 6-7 mm.
2. Peel and cut the eggs to the same size as the potatoes.
3. Wash the cucumbers, dry with a paper towel, cut off the ends and cut into cubes.
4. Cut the sausage in the same way as all the ingredients. All food in the dish should be cut equally.
5. Wash green onions, dry and chop finely.
6. Wash dill with parsley, dry and chop.
7. Put all the products in a large saucepan, add sour cream with mayonnaise and mustard. Season with citric acid salt and cover with cold drinking water.
8. Mix the summer okroshka well with the sausage and serve it to the table with a fresh piece of bread or croutons.
