Zucchini and minced meat dishes always turn out tasty, healthy and economical, because zucchini is not an expensive vegetable, and minced meat can be diluted with many products and, as a result, you can get a dish in large quantities. We all cook separately meat patties and fried zucchini. But not many people guess to combine both dishes together. In this recipe, I suggest adding zucchini pulp to the minced meat, with which to fill the zucchini crust (shell).
In the preparation of this dish, it should be borne in mind that zucchini gives a lot of juice, but it is not needed at all in cutlets. Therefore, before adding it to the minced meat, the pulp should be squeezed well. And if you don't have enough minced meat, then you can add onions, carrots, mushrooms, potatoes, peas, cabbage, etc. to it. For juiciness of minced meat, add meat or mushroom broth, or ordinary clean drinking water. To make the cutlets richer, make minced meat from several types of meat, with pork, beef, chicken. Another important point is that cutlets, like meat, must be laid out exclusively in a preheated pan with a fairly thick layer of oil. This will help them cook well and retain the juice inside.

- Zucchini - 1 pc.

- Onions - 1 pc.
- Eggs - 1 pc.
- Salt - 1 tsp or to taste
- Ground black pepper - a pinch
- Vegetable oil - for frying
Cooking meat cutlets in a squash casing
1. Wash the zucchini, dry with a paper towel and cut into rings about 7 mm thick. Remove the pulp from each bite with a tablespoon. If the fruits are ripe, then discard the pulp, and if ground, then leave it for the minced meat.
2. Wash the pork and dry thoroughly with a paper towel. Pass it through a medium wire grinder, or chop it in a blender. Peel the onions and twist them as well. If the zucchini is young, then also twist the pulp removed from them.
3. Pour the egg into the minced meat, season with salt, black pepper and any spices and spices to taste.
4. Mix the minced meat well and fill the zucchini casings tightly with it.
5. Heat the frying pan with vegetable oil thoroughly. The oil must be very hot for the minced meat to cook well. Then put meat patties in zucchini in a frying pan.
6. Fry cutlets on one side for about 5-7 minutes until golden brown over slightly over medium heat. Then turn them over to the back side, reduce the heat, cover the pan with a lid and leave the patties over low heat for another 10-15 minutes.
7. Serve ready-made squash cutlets with any side dish: boiled mashed potatoes, spaghetti, rice or with fresh vegetable salad.
