Recipe for making delicious cutlets with vegetables, as well as useful tips on how to make a meat appetizer incomparable.
It would seem, what could be easier than cooking cutlets? However, not everyone knows how to cook them correctly. For some housewives, they fall apart in a frying pan, for others they come out too dense, and still others cannot guess with the proportions of products. If you have encountered similar problems, then my advice will help you prepare a dish so that you can serve cutlets even for a solemn feast.
Tips on how to cook delicious meat patties
- The meat is of high quality and fat. If the meat is too lean, then add lard or fat to the minced meat, they will add juiciness to the dish.
- Minced meat is exclusively homemade and freshly prepared, i.e. twisted in a meat grinder. Always avoid purchased products, even with repeated quality checks. If the minced meat is frozen, then it will not give the cutlets the desired taste and juiciness.
- Minced meat can be finely chopped. In this case, the meat fibers are not choked with a meat grinder knife and retain more juice.
- An egg is a must! Otherwise, the cutlets will disintegrate. The main thing is not to overdo it - 1 pc. for 500 g of meat, otherwise the cutlets will be tough.
- Onions are also a must! For the same amount of meat - 100 g. Onions can be pre-sautéed to taste or used raw, but twisted.
- Bread is an essential ingredient. It did not appear out of a desire to save money, but the soaked crumb makes the cutlets soft and tender. The proportion is as follows: for 500 g of meat - 100 g of white bread and 150 g of milk or water. However, I will say right away that if you are cooking meat patties with vegetables, you do not need bread. For example, in my recipe, bread replaces potatoes, which makes the cutlets juicier. You can also put pumpkin, zucchini, cabbage or carrots in the minced meat.
- Other additives are garlic, spices and herbs. This is not for everybody. But, I note that apart from black pepper, nothing is recognized in classic meat patties.
In principle, these are all important components of properly cooked cutlets. On my own I can add the following:
- The minced meat should be kneaded thoroughly so that all spices and products are evenly distributed among themselves, this is the key to juicy and tasty cutlets.
- So that the minced meat does not stick to your hands during sculpting, moisten your hands in water.
- It is advisable to use a frying pan with a thick bottom, a cast iron pan is ideal.
- The oil in the pan should be very hot.
- After each portion of cutlets fried, remove any burnt pieces from the pan.
- The fire for frying should be medium so that the cutlets do not burn and have time to cook inside.

Ingredients:
- Pork - 1 kg
- Onions - 200 g or 2-3 pcs. depending on the size
- Potatoes - 150 g or 1 pc. (large)
- Egg - 1 pc.
- Garlic - 2 cloves
- Soy sauce - 1 tablespoon
- Nutmeg - 0.5 tsp
- Wasabi sauce - 1/3 tsp
- Mayonnaise - 1, 5 tablespoons
- Salt to taste
- Ground black pepper - to taste
- Vegetable oil
Cooking meat cutlets with vegetables
1. Wash the meat and cut off the film. Peel onions, garlic and potatoes. Cut all products into pieces that would fit in the neck of your meat grinder.
2. Place the medium-hole accessory ring in the meat grinder and twist all the food.
3. Beat the egg into the minced meat and pour in the mayonnaise. Mayonnaise will add incredible tenderness to cutlets.
4. Then salt and season everything with the necessary spices (black pepper, nutmeg, wasabi sauce and soy sauce).
5. Mix the minced meat well until smooth.
6. Now, as I wrote above, moisten your hands with water and form oval cutlets. However, you can give them a different configuration, for example, round.
7. Pour vegetable oil into a frying pan, which it is desirable to choose refined and heat it well. When the pan is heated to the desired temperature, spread the cutlets to fry. Grill them over medium heat on both sides for about 5 minutes each.
8. Ready cutlets can be served. It is best to consume them immediately after cooking, as they are most delicious at that point.
