Pancakes are a product made from batter, mixed with eggs, flour, water or milk. There are a huge number of their varieties, for example, cheese pancakes, pancakes and latkes. But today I will tell you the recipe for making healthy and tasty zucchini pancakes.
Of course, every housewife has a win-win universal recipe for their preparation. For example, some squash pulp is rubbed on a coarse grater, others on a fine grater. Some add flour, others semolina, some oatmeal, and others do not put anything at all. All of the pancakes are good, and it's worth trying all of them, of course. But I want to tell you an unusual recipe for zucchini pancakes, which will have a perfectly even round shape, while I will not use any culinary serving rings. I think that I am interested in many.

Ingredients:
- Zucchini - 1 pc.
- Flour - 2-3 tbsp.
- Garlic - 2 cloves
- Egg - 1 pc.
- Salt - 0.5 tsp or to taste
- Refined vegetable oil - for frying
Cooking zucchini pancakes in the skin
1. So, the first step is to get a zucchini. When choosing it, pay attention to its soft and easily pierced skin. If it is too hard, then the fruit with a fibrous pulp, not very suitable for culinary purposes. Wash the finished zucchini, dry with a paper towel and cut into rings about 5 mm thick.
2. Now for the most interesting process. Cut out the core from each zucchini wedge, leaving only its shell, as shown in the photo.
3. Place the pulp into a food processor, into which place the cutting knife attachment.
4. And grind the vegetable well until smooth. For this process, you can use the finest grater, blender or meat grinder.
5. Transfer the resulting zucchini mass into a deep bowl and squeeze the garlic cloves through a press.
6. Add flour, a pinch of salt to the food and beat in an egg.
7. Stir the squash puree well.
8. Now start frying pancakes. Pour vegetable oil into the pan and heat it well. Reduce the temperature to medium and add the zucchini skins to roast.
9. Fill the zucchini rings with the cooked puree.
10. Place the skillet on the stove and continue to grill the courgettes as usual. First, fry them on one side, literally 2-3 minutes, then turn them over and cook until golden brown.
11. Ready-made pancakes can be served for dinner or breakfast, both hot and cold. In addition, such pancakes can be served in the form of everyone's favorite snack "fried zucchini with garlic." If you season them with freshly squeezed garlic on top, sprinkle with mayonnaise and grind with herbs, you will get just a festive snack, which you will surprise everyone at the table with.
