Ingredients:
- Eggplant - 2 pcs.
- Bitter pepper - 1 pc.
- Salt - 0.5 tsp
- Sweet bell pepper - 2-3 pcs.
- Soy sauce - 2 tablespoons
- Ground black pepper - a pinch
- Mustard - 1 tsp
- Olive oil - 3-5 tablespoons
- Garlic - 1 clove
Step-by-step cooking of baked eggplants with bell peppers in sauce in the oven, recipe with photo:
1. Pour olive oil, soy sauce and mustard into a large deep bowl.
2. Add black pepper and stir the dressing.
3. Wash the eggplants, dry with a paper towel and cut into 1 cm thick rings. Send the eggplants to the marinade. If the fruits are old, then bitterness must be removed from them. To do this, sprinkle the sliced eggplant with salt and leave for 1 hour. Then rinse them with running water and rinse off the secreted juice.
4. Wash the bell peppers and dry with a paper towel. Remove the stalk, clean out the seeds, and cut off the inner partitions. Cut the pepper into wedges and marinate with the eggplant.
5. Toss the eggplant and peppers.
6. Peel the garlic, and the hot pepper - from the inner seeds. Cut food into small pieces.
7. Add them to the container with vegetables and stir. Leave the eggplant and pepper to marinate for 15-30 minutes.
8. After this time, place the vegetables on a baking sheet.
9. Heat the oven to 180 degrees and send vegetables to bake for half an hour. Check readiness with a puncture of a knife or fork: they should be soft.
