- Vegetable oil - 2 tablespoons
A step-by-step recipe for making orange pancakes with kefir:
1. Pour kefir at room temperature into a container for kneading dough. You can even heat it up to 37-38 degrees, but no more, otherwise it will curdle immediately. This should be done because soda reacts with an acidic environment only at warm temperatures. Therefore, remove the kefir from the refrigerator in advance.
2. Put soda on kefir and stir. It will immediately begin to foam and bubbles will form. Add the egg next. It should also be at room temperature.
3. Add flour, a pinch of salt and sugar.
4. Add orange zest.
5. Using a whisk, knead the dough until smooth and smooth, breaking all the lumps. Then pour vegetable oil into the dough. This is necessary so that when frying it could not be used at all, or used in a minimal amount. The consistency of the dough should be medium, slightly thicker than pancake and less often thick sour cream. Then the pancakes will turn out to be more tender, but not so fluffy. If you want to get tall pancakes, then add more flour to the dough. However, keep in mind that such pancakes will be denser and more nutritious.
6. Place the pan on the stove and heat well. With a silicone brush, brush the bottom with a thin layer of oil and pour out the dough with a spoon. In medium heat, fry the pancakes until small holes appear on the surface and immediately turn them over to the back side.
