Milk candy is a confection made by heating sugar with liquid. In the role of the latter, water, milk, lemon juice, sour cream, etc. are used. And the main and invariable ingredient is sugar. Use it with regular refined or cane. The consistency of the sweets will depend on its quantity. That is, lollipops can be hard and soft. The lower the sugar, the softer the candy. It depends on the desired outcome. Therefore, the amount of sugar in the recipe can be varied.

To make lollipops at home, you need to choose the right utensils. A cast iron skillet, a nonstick skillet, an aluminum pan, or a thick-bottomed stainless steel pan works well. You can also conduct culinary experiments. For example, add nuts, raisins, etc. to molds with caramel. However, milk candy can be easily prepared at home on your own, the taste of which will be no worse than an industrial analogue. On the contrary, it is tastier, healthier, and most importantly, natural products are used.

1. Pour milk into a convenient cooking container and bring to a boil over medium heat.

2. When foam forms on the surface of the milk and rises rapidly, remove the container from the heat so that the milk does not escape. Then add sugar.

3. Turn on medium heat and place the pot on the stove.

5. After the milk boils again, turn the temperature down to the minimum setting so that the froth settles.

6. Continue boiling milk. It will constantly boil and change color.

7. After 15 minutes, add vanilla sugar and continue to cook for another 5 minutes, stirring regularly. The consistency of the mass will begin to thicken and acquire a golden hue. Boil down the milk to the consistency you want to get as a result. The darker and denser the mass, the harder the candy will be. Accordingly, and vice versa: with a lighter shade, sweets will be softer. If you cook a large portion of sweets for a long time, then at the end of cooking, pour in 0.5 tsp. vinegar or lemon juice. This will prevent the caramel from crystallizing.

8. Pour the prepared mass into silicone molds for sweets and leave to harden in the refrigerator. If desired, while the mass is liquid, dip a nut into each candy. Ready-made milk lollipops from silicone molds are easy to remove. Store them in the refrigerator as they will become soft and sticky at room temperature.
