Marshmallow is a delicate and pleasant dessert. An airy, sweet treat for children and adults. You will have to tinker with its preparation, but the result will exceed all expectations. Of course, the easiest way to buy it, and it is not expensive at all. But having made it yourself, it will be much tastier and healthier. And the composition and quality of the finished product will not make you doubt for a second.
So, before making homemade marshmallows, you must first prepare applesauce (you can use other fruits, but apples contain a large amount of pectin - a natural thickener that is so important for marshmallows), then cool it well and beat it with egg white in lush foam. It is important here that the ingredients are cold. Then combine the mixture with hot sugar syrup with agar-agar and beat until fluffy. After adding the syrup, you need to beat the mass for no more than 5 minutes, because the agar begins to act already at 40 degrees. Drain the marshmallows, wait until they dry, sprinkle with powder, and you can enjoy the incredibly delicate and mild taste of a sweet dessert.
Important! We do not recommend replacing agar with gelatin, on its basis, according to this recipe, homemade marshmallows will not work.

Ingredients:
- Apples - 3 pcs.
- Sugar - 300 g (100 g for applesauce, 200 g for syrup)
- Egg white - 1 pc.

- Agar-agar - 5 g

Step by step preparation of homemade marshmallows
1. Peel the apples, core them and cut into small cubes.
2. Send them to a double-bottomed saucepan and turn on the stove. To prevent the apples from burning, add 50 ml of water. Cover and simmer over medium heat, stirring occasionally, until the fruit is mashed. The excess liquid should evaporate, and the apple mass should be thick.
3. Then rub the fruit puree through a sieve to get rid of the grains, and send it back to the saucepan. Add 100 grams of granulated sugar, according to the recipe for homemade marshmallows, step by step, and turn on the stove. Heat until sugar is completely dissolved. Then remove from heat and cool. The resulting mass in a cold state will acquire a homogeneous and thick consistency.
4. Now pour this puree into the mixing bowl with a mixer. Whisks and dishes must be perfectly clean and dry. Beat until white foam forms at first on low speed. Then add half of one egg white (make sure that small particles of yolk do not accidentally get into the white) and increase the speed. Then pour in the other half of the protein and increase the speed to maximum. Whisk until thickest peaks. This will take approximately 10 minutes. The whipped mass should be such that if you turn the bowl over, it should not flow out. Food coloring can be added at this point, if desired.
5. Meanwhile, pour 75 grams of water into a saucepan, add 5 grams of agar-agar and 200 grams of sugar. Put on the stove. Boil the syrup for 5-7 minutes after boiling, stirring constantly. Of course, it is better to whisk the fruit puree with the protein and boil the syrup at the same time. But this is possible if you have a stand mixer. If not, then everything is in turn.
6. The syrup will be ready when, typing it into a spoon, it will flow down in an even, thin and viscous stream. And its color will become slightly caramel. Now while whisking the fruit mixture with protein at high speed with one hand, pour the syrup in a thin stream with the other hand. Beat the mixture for another 3-4 minutes.
7. Place fluffy whipped foam in a pastry bag with an asterisk attachment and place the marshmallows on parchment paper. The whipped mixture will be still warm when you do this. As it cools, it will dry out. Leave the marshmallows to dry at room temperature for 10 hours, preferably overnight.
8. Sprinkle the frozen marshmallows with powdered sugar on top. Then, with dry hands, carefully separate them from the parchment and connect in halves. Sprinkle with icing sugar on top if desired.
