Are you already tired of ordinary cutlets and stewed vegetables? Then we suggest making a vegetable stew with meatballs for dinner. The set of vegetables for the stew will be standard - onions, carrots, potatoes and cabbage. In the season of vegetables, you can diversify it at your discretion. After all, the ingredients can be very diverse - cauliflower, broccoli, zucchini, bell peppers, green beans and other seasonal vegetables.
For meatballs, you can use pork or minced chicken. The ground beef will need to be diluted with another type of ground beef so that the meatballs are tender. So let's cook.

Ingredients:
- Minced meat (for meatballs) - 300 g
- Semolina (for meatballs) - 3 tbsp. l.
- Egg (for meatballs) - 1 pc.
- Potatoes - 500 g
- Onions - 1 pc.
- Carrots - 1 pc.
- Vegetable oil - 4 tbsp. l.
- Cabbage - 500-600 g
- Tomato juice - 400 ml
- Spices to taste
Cooking vegetable stew with potatoes and meatballs step by step
1. There are several ways to make a stew - the first is to simply put all the ingredients in a saucepan, pour over the juice and simmer. The second is that all vegetables will be fried first, and then they will be stewed. Well, the third way is to bake all the vegetables on the grill, and then stew them. We will cook in the second way. Therefore, we clean the potatoes and cut them into cubes or cut them in half (depending on the size of the root crop). Heat vegetable oil in a frying pan and spread the potatoes. Fry it over high heat on all sides. If there are a lot of potatoes, fry them in several stages.
2. Cut onions and carrots into cubes and fry over high heat.
3. Cut the cabbage in half. Then we put one of the halves with a cut on the board and cut into thick strips. Then we cut it into cubes. We also fry the cabbage over high heat.
4. Twist the meat in a meat grinder, or take the ready-made minced meat immediately. Season it with salt and pepper, add an egg and semolina to it. Stir the minced meat thoroughly and roll into walnut-sized or larger meatballs.
5. Fry the meatballs until golden brown in the same pan where the vegetables were fried.
6. Place all stew ingredients in a saucepan.
7. Pour in tomato juice and add water if there is not enough liquid. Season the dish with salt and pepper to your liking. Add fresh herbs as desired.
8. Simmer the stew over medium heat, covered, for 30 minutes. Stir occasionally to prevent the ingredients from burning. Bon Appetit!
