In the original recipe, khachapuri is cooked with yogurt. But getting this yogurt in a city is not so easy, and it is not always handy to do, so we suggest you make khachapuri on kefir. The dough turns out to be tasty, not dry, sufficiently elastic and obedient.
How to make yogurt for those who are not lazy: heat 2 liters of whole milk to 40 degrees, add 1 tbsp. l. sour cream (homemade or as fat as possible). Mix and wrap in a towel. After two hours, put in a cold place until thickened.
Let's talk about the filling in the original khachapuri recipe using feta cheese suluguni cheese or a mixture of them. We will take what is easiest to buy at the nearest store - cottage cheese and hard salted cheese.
Add greens to the filling at will and preference for certain herbs. Cilantro, dill, green onions, parsley, everything will do. Let's cook.

- Kefir 2, 5% - 250 ml (dough)
- Flour - 300 g (dough)
- Soda - 0.5 tsp (dough)
- Sugar - 1 tbsp. l. (dough)
- Butter - 100 g (dough)
- Salt - 1 tbsp l. (dough)
- Fat cottage cheese - 400 g (filling)
- Sour cream - 2 tbsp. l (filling)
- Russian type cheese - 300 g
- Salt to taste (filling)

Step-by-step preparation of khachapuri on kefir with cottage cheese and cheese
First, melt the butter and cool it down. Add kefir, salt and sugar to it.
We do not extinguish the soda, but mix it with flour. Add flour to liquid ingredients gradually, making sure to sift.
Knead the dough adding flour as needed. The dough is very elastic and not sticky. We leave it to rest after kneading.
Let's get to the stuffing for now. Mix cottage cheese with grated cheese and add salt to taste.
Add any greens of your choice to the filling. Or leave the filling without greens.
Mix it well with a fork. If you get a dry filling, add the sour cream in the amount indicated in the ingredients.
Divide the dough into 4-6 parts. We take one ball, cover the rest with a towel so that they do not get weathered. Roll out the dough into a cake, rather thinly, but so that the dough does not break.
Put the filling in the center. The more filling, the tastier.
We collect the edges of the cake like a bag and press down to the center.
Roll out the cake with a rolling pin. The thickness of the finished cake is 2-3 cm.
Fry khachapuri in a dry frying pan over medium heat. Turn it over when one side is browned. You can bake khachapuri in the oven.
Serve the khachapuri hot with a piece of butter. Cold, they are also tasty, but the whole spectrum of taste is lost from the melted cheese and cottage cheese inside. Therefore, we advise you to cook at one time in order to eat everything at once. Bon Appetit.
