A detailed master class (with step-by-step photos) of making traditional Turkish gözleme cakes with feta cheese, cottage cheese and herbs.
Anyone who has visited Turkey at least once has probably tried traditional Turkish flatbreads called gözleme. These cakes are cooked on charcoal in special convex pans called "sach" (today there are electric pans of this kind).
Gözleme is prepared on unleavened, kefir or yeast dough; moreover, the fillings for these cakes can be very diverse. The most popular and most delicious filling is with feta cheese (or coarse-grained salted cottage cheese) and herbs.

Ingredients:
- Flour - 380 grams + a little for sprinkling
- Water - a glass (250 ml.)
- Salt - 1/2 teaspoon
- Cheese - 150 grams (soft)
- Cottage cheese - 150 grams of coarse-grained (no need to salt, since the feta cheese is salted)
- Greens - a bunch of fresh parsley and dill
Cooking Turkish tortillas - gozleme
1. Combine flour with salt, stir. Continuously stirring, add water. 2. Knead soft plastic dough. 3. Cooking the filling: knead the cheese with a fork, add cottage cheese and finely chopped greens to it. Mix the ingredients.
4. Divide the dough into 3-4 parts, roll out each part very thinly. Distribute the filling in the center of the layer. 6. Pulling the edges, we fold them in the form of an envelope.
7. A couple of times, gently roll over the cake with a rolling pin (make sure that the filling does not come out), turn it over to the other side and repeat. Put the cake in a dry preheated frying pan, grease the top of the cake with olive oil, turn it over, grease it again, then turn the cake from one side to the other a couple of times until it becomes golden brown.
Serve with hot sweet tea.
