Surely everyone knows gingerbread or cookies. This is a traditional autumn-winter pastry with a spicy, light and warming spice. Today I thought that if such desserts are baked, why not make pancakes? And my idea turned out to be more than successful. This is the perfect hearty and hot breakfast for a frosty morning.
Such pancakes will be a great tasty treat for a family dinner, and for a festive table, and for Shrovetide, and for any other celebration. They will create a great mood for everyone. They can be served as a snack with tea or sour cream, or sprinkled with honey. It is a wonderful combination of two products: honey and ginger. Also, such pancakes are great combined with other products, for example, with lightly salted red fish.
It is worth noting that ginger is a spice that not only gives food a subtle specific aroma, but is also very useful for the body. It is used for digestive disorders, colds, to increase and strengthen immunity, as a general tonic. For baking pancakes, both ground ginger powder and fresh root grated on a fine grater are suitable.

Ingredients:
- Flour - 1 tbsp.
- Milk - 2 tbsp.
- Vegetable oil - 2 tablespoons
- Egg - 1 pc.
- Ginger powder - 1.5 tsp
- Sugar - 3-5 tablespoons or to taste
- Salt - a pinch
Making gingerbread pancakes
1. Pour milk into a mixing bowl. Its temperature should be at room temperature, so remove the milk from the refrigerator well in advance. You can also heat milk and make custard gingerbread pancakes.
2. Pour vegetable oil into the milk and beat in an egg. Instead of vegetable oil, olive oil or melted butter will do. But you cannot put any fat on, otherwise the pancakes will stick to the surface of the pan during baking.
3. Use a whisk or blender to stir the food until completely dissolved.
4. Pour in flour, which is desirable to sift through a sieve. It will be saturated with oxygen and the pancakes will be more tender. Also add a pinch of salt, sugar to taste and add ginger powder. Knead the dough again until smooth without lumps.
5. Place the pan on the stove and heat well. Use a scoop to scoop the dough and pour it onto the surface. Twist it in all directions so that the dough spreads evenly. Choose the amount of dough yourself. It depends on the size of the pan.
6. Fry the pancake on one side for about 2 minutes until golden brown, then turn it over and bake for less time, about 1 minute. Because on the second side, they cook much faster.
7. Serve hot gingerbread pancakes with any sauces and jams.
In fairness, it is worth noting that pancakes can be prepared with saffron, cinnamon, nutmeg, vanilla and many other aromatic spices.
