1. Sort the buckwheat, removing dirt and stones. Place it in a fine sieve and rinse under running water.

2. Place the mushrooms in a deep bowl and cover with boiling water. Cover and leave for 15-20 minutes to swell. If you fill them with water at room temperature, then soak them for about an hour.

3. After a certain time, remove the mushrooms from the liquid and cut into smaller pieces. In this case, do not pour out the liquid in which they were soaked. You will need it for this recipe.

4. Place the mushrooms in an oven-safe pot.

5. Put prepared buckwheat on top of the mushrooms and season with salt.

6. Now take the water where the mushrooms were soaked and carefully pour it into the pot through a fine sieve or cheesecloth. The liquid should cover the buckwheat by about 2 cm higher. Since during cooking, the cereal will absorb all the moisture, from which it will swell and increase. The amount of liquid should be approximately twice the volume of cereals. Therefore, if there is not enough brine, top up with ordinary drinking water.

7. Close the pot with a lid and place in the oven. Turn on the heating 180 degrees and cook the food for 20 minutes. If the pot is ceramic, then it should be placed only in a cool oven chamber and heated with it. Since the temperature is high, there is a risk that the dishes will crack.
