The recipe for this pizza is taken from Jamie Oliver's book "My Italy". During his culinary travels in Italy, Oliver found the perfect and even canonical dough recipe. By following all the rules, you will get a great pizza. The dough is prepared not only from wheat flour, but also a small amount of semolina is added. Such a dough is obtained with an ideal density, neutral taste and a pleasant elastic texture. A flatbread for a future pizza can be easily stretched with your hands, as true Italians do.
For the best result, D. Oliver recommends using a mixture of premium wheat flour with very fine flour, grade 00! In our country, grade 00 flour can be purchased only in Italian grocery stores. Alternatively, you can buy home-made fine flour, which is usually sold with the "extra" label. But if you do not find such flour, use only premium wheat flour. Ingredients:
- Flour - 200 g
- Water - 145 ml
- Semolina - 50 g
- Salt - a pinch
- Vegetable oil - 1 tablespoon in dough and for frying eggplants
- Dry yeast - 1 tsp
- Ketchup - 30 ml
- Eggplant - 0.5 pcs.
- Sugar - 1 tsp
- Smoked sausage - 250 g
- Garlic - 2 cloves
- Onions - 1 pc.
- Tomatoes - 2 pcs.
- Cheese - 100 g
Step-by-step pizza preparation according to Jamie Oliver's recipe, recipe with photo:
1. Prepare food for the dough: flour, semolina, water at a temperature of about 37 degrees, salt, vegetable oil and dry yeast.
2. Also prepare products for the filling: eggplant, tomatoes, onions, garlic, cheese, ketchup and sausage.
3. In a deep bowl for kneading the dough, pour flour, which sift through a fine sieve, so that it is enriched with oxygen, and the dough is softer.
4. Add semolina to the flour.
5. Add a pinch of salt, sugar and dry yeast.
6. Pour in vegetable oil and add some drinking water.
7. Knead an elastic dough so that it does not stick to your hands. Cover it with a towel and set it aside to fit. In the meantime, get busy with the filling.
8. Peel the onions and garlic, wash, dry and chop: onion - into thin quarter rings, and garlic - into small cubes.
9. Remove the wrapping film from the sausage and cut into thin rings. Grate the cheese on a coarse grater. Wash the tomatoes, dry with a towel and cut into rings or half rings (if very large tomatoes).
10. Wash the eggplants, dry them with a towel and cut into 1x3 cm bars. If you use ripe fruits, they probably contain bitterness. Therefore, remove it first. To do this, sprinkle the chopped vegetable with salt and leave for 15-20 minutes. Then rinse it under running water and dry it. If you use young fruits, then you can not carry out such actions, because milk eggplants do not contain bitterness.
11. In a skillet, heat the vegetable oil and add the eggplants. Fry them over medium heat until golden brown. Do not overdry them too much.
12. During this time, the dough will come up and double in size. Divide it in half and roll each part with a rolling pin into a round layer.
13. Brush the dough with ketchup diluted with a little water, add chopped garlic and chopped onions.
14. Place the sliced sausage on top.
15. Add the fried eggplant.
16. Place the chopped tomatoes.
17. Sprinkle the food with cheese and place the baking sheet in a preheated oven to 180 degrees for half an hour. Serve Jamie Oliver's cooked pizza after cooking. Usually one such round pizza is for one person.
