The zucchini season has already begun, which means that you need to make the most of the vegetable and prepare a variety of delicious dishes from it. I propose a recipe for summer pancakes from zucchini and duck meat. It does not require any special culinary skills, it takes a minimum of time and labor. At the same time, the dish turns out to be tasty and tender. Surely many have prepared and tried the popular Belarusian potato pancakes. But not everyone knows that they can be prepared from other products, such as zucchini with meat. The taste and texture of these vegetable fritters is much more tender than potato pancakes. This is a healthy breakfast that will fill you well for the whole working day, cheer you up and energize.
Instead of zucchini, you can use zucchini, the color and taste of the pancakes will remain the same expressive and bright. And if you want to make the pancakes more satisfying and dense, you can add a little flour or semolina. But then use the minimum amount of flour so that you get vegetable pancakes, and not flour pancakes interspersed with meat and vegetables. For cooking, choose young zucchini, they have no rough skin and practically no seeds. If you are using overgrown ripe fruits, remove the seeds and peel the skin. The dish turns out to be low-calorie, thanks to which it is easily absorbed by the body and can be used for baby and diet food. You can serve potato pancakes as an independent dish or as a side dish for potatoes, pasta or rice.

Ingredients:
- Zucchini - 1 pc.
- Garlic - 2 cloves
- Eggs - 2 pcs.
- Ground black pepper - a pinch
- Duck fillet - 2 pcs.
- Salt - 1 tsp or to taste
- Vegetable oil - for frying
Step by step cooking zucchini and duck pancakes, recipe with photo:
1. Peel the zucchini if it is ripe. it is dense and rough. Also remove large seeds.
2. Twist the zucchini pulp through a meat grinder. If desired, you can grate the zucchini on a medium or fine grater.
3. Transfer the vegetable mass to a fine iron sieve and leave for 5-7 minutes to drain excess liquid. Press down on the puree with a spoon to drain the juice faster.
4. Wash the duck fillet, dry with a paper towel and twist through a meat grinder.
5. Peel the garlic and pass through a press. Salt and pepper the minced meat. Add raw eggs. If you wish, you can add any spices and herbs.
6. Stir the minced meat well. It will turn out to be a liquid consistency, so it will not work to form potato pancakes with your hands.
7. Heat the pan with vegetable oil well and pour the dough into the bottom of the pan with a tablespoon. Turn on medium heat and fry the pancakes until golden brown.
8. Turn the zucchini and duck pancakes over and cook until golden, about 3-4 minutes. Serve them hot, freshly cooked with sour cream or garlic sauce.
