I propose a step-by-step recipe for making an unusual omelet with corn, pepper, tomatoes and cheese. The word omelet is a dish made of eggs, possibly with the addition of milk, sour cream, water. In fact, these are the same food, which differs in the composition of the ingredients and the option for the presence of eggs. It is believed to be a French dish where it is made with mixed eggs rather than beaten eggs. As a rule, the omelet is fried in butter (usually butter) on one side until the eggs are coagulated, rolled up and served. Sometimes it is prepared with a filling, which is filled into the finished omelet before rolling or immediately baked into the egg mass. In this recipe, I suggest making an omelet with baked products.
This simple omelet has its own little secrets. I advise you to choose tomatoes that are dense, fleshy and not very juicy, so that they do not flow in the pan and turn into a shapeless mass. Cheese is suitable not only for hard varieties, but also processed. Use a red, green, or yellow bell pepper of your choice. The corn recipe uses freshly boiled corn, but canned or frozen corn will work.

- Corn (boiled ear) - 1 pc.

- Sweet bell pepper - 0.5 pcs.
- Vegetable oil - for frying

- Eggs - 2 pcs.
- Cheese - 100 g
Step-by-step preparation of an omelet with corn, pepper, tomatoes and cheese, a recipe with a photo:
1. Pre-boil the corn until cooked in salted water. How to do this in water on a stove or microwave, you can find a step-by-step recipe with a photo on the pages of the site. Then cool it so as not to burn yourself and cut off the grains with a sharp knife.
2. Use your hands to disassemble the grains so that they are detached from each other.
3. Wash the bell peppers and dry with a paper towel. Remove the tail and clean out the seeds inside. Cut the peppers into strips or cubes.
4. Wash the tomatoes, dry with a towel and cut into wedges.
5. In a cast iron skillet with high sides, heat the oil and add the corn. Fry it over medium heat for about 1-2 minutes.
6. Add the bell peppers to the corn in the skillet, stir and cook for another 3-4 minutes.
7. Add the tomatoes to the skillet, stir and fry all the ingredients together for another 1 minute.
8. Wash the eggs, pour the contents into a bowl and add a pinch of salt.
9. Grate the cheese and finely chop the basil. Send the groceries to the egg bowl.
10. Stir in the egg cheese mass.
11. Pour the egg mass into a frying pan.
12. Swirl the pan to spread the egg mass over the entire area. Cover the skillet with a lid, turn the heat to medium and cook the corn, pepper, tomato and cheese omelet for 5 minutes until the eggs coagulate. Serve hot food immediately after cooking. You can serve the omelet directly in the pan, it will keep the dish warm for a long time.
