However, in addition to bell peppers, eggplants, zucchini, tomatoes, even sweet onions and pumpkin flowers are used for stuffing. Since the word "gemista" itself means "stuffed" or "stuffed", so you can stuff any vegetables.
The filling for Gemist can be minced meat or vegetarian: rice with vegetables. The latest version is fine for the post. Serve with yogurt or avgolemono sauce. In this review, we will prepare gemista with meat, vegetables, rice and baked potatoes. You can take any meat for the recipe, according to the taste of the cook. It is usually twisted or cut into small pieces with a knife. Rice is taken medium starchy, or it is washed well several times under running water. The potatoes are not used for the filling, but cut into slices is placed on a baking sheet, which serves as a supporting support for the peppers so that they do not fall and turn over during baking.

Ingredients:
- Sweet bell pepper - 6 pcs.
- Meat (any sort) - 600 g
- Rice - 70 g
- Ground black pepper - a pinch
- Tomatoes - 3 pcs.
- Garlic - 2 wedges
- Cilantro - a few twigs
- Onions - 1 pc.
- Potatoes - 3 pcs.
- Vegetable oil - for frying
- Hot pepper - 0.25 pods
- Parsley - a few twigs
- Salt - 1 tsp or to taste
Step by step cooking gemista with meat, vegetables, rice and baked potatoes, recipe with photo:
1. Wash the meat, cut off excess films with veins, dry with a paper towel and twist through a meat grinder or chop finely.
2. Peel the onions, wash and chop into small cubes.
3. Peel the garlic, and the hot pepper from the inner seeds and chop finely.
4. Wash greens, dry with a towel and chop finely.
5. Place the slicer attachment in the food processor and lower the washed and sliced tomatoes.
6. Grind the tomatoes until smooth.
7. Heat vegetable oil in a skillet and add onions.
8. Then add the twisted meat. Stir the food and fry over medium heat for about 5-7 minutes.
9. Wash the rice well to wash off all the starch and send it to the pan to the meat. Stir and cook for 5 minutes.
10. Send the twisted tomatoes to the skillet with the meat and rice.
11. Next, add chopped herbs with garlic and hot pepper.
12. Season food with salt and black pepper. Place the lid on the skillet and simmer for 10 minutes. Rice, thanks to tomato puree, should double in volume.
13. Wash the bell peppers and pat dry with a paper towel. Cut off the stem and clean out the seed box.
14. Fill the peppers with the filling not to the brim. during the cooking process, the rice will increase even more. Pour a little water into each pepper, which is necessary for cooking the rice. Place the peppers in a baking dish.
15. Cover the peppers with the caps that you cut from them. Peel the potatoes, wash, cut into slices and place in a mold, propping up the peppers so that they do not fall off during cooking. Cover the food with a lid or foil and place it in a preheated oven to 180 degrees for 40 minutes. Remove the lid or foil 15 minutes before cooking to brown the peppers and potatoes. Serve hot gemistu with meat, vegetables, rice and baked potatoes.
