Laghman is a culinary popular asset of the Uyghurs and Dungans who live in Kazakhstan, Kyrgyzstan and China. Lagman is prepared from meat, most often from lamb or beef, with vegetables and long noodles. With a large amount of broth, the dish looks like a soup, and with a smaller amount of it, it looks like noodles with gravy. Therefore, lagman is a cross between the first and the main course.

Like any national dish, lagman is prepared in many variations, and the range of products and spices depends on the imagination of the cook. But in all recipes from vegetables, peppers, eggplants, onions, carrots, tomatoes, potatoes remain unchanged. Beans, radishes, paprika, a mixture of red and hot peppers, garlic, etc. are added less often. A large amount of spices and herbs are added to the lagman.

The recipe noodles are pulled in a special way: by spinning a piece of dough and pulling it into a skein of noodles. In the east, you can buy it at the market or in the store, it is sold frozen. Its difference is not only in its peculiar form. However, in modern life, many housewives get by with ordinary spaghetti, pasta and durum wheat pasta. This greatly simplifies and speeds up the work. The dough for cooking is soaked in salt and soda water, so during the meal, the noodles are easily picked up with a spoon. I will only introduce you to the preparation of the sauce. Vegetable gravy is easy to make at home in the kitchen. But, of course, the recipe will take a little time and patience, but everyone will definitely be satisfied with the result.

Ingredients:

  • Meat - 1 kg (any sort)
  • Ground black pepper - a pinch
  • Potatoes - 2 pcs.
  • Vegetable oil - for frying
  • Tomatoes - 4 pcs.
  • Sweet bell pepper - 2 pcs.
  • Garlic - 2 cloves
  • Onions - 1 pc.
  • Salt - 1 tsp or to taste
  • Carrots - 1 pc.
  • Noodles - 50 g per serving
  • Hot pepper - 0.5 pods
  • Greens - a bunch

10. Saute the onions over medium heat until translucent.

17. Stir food, salt, pepper and add water. Adjust the amount of water yourself, depending on what consistency you want to get the dish, as the first or second course. Boil the food, screw the temperature down to the minimum setting and cook the lagman under the lid for 50 minutes.

18. Meanwhile, boil the spaghetti. Dip them in boiling salted water and cook for as long as indicated on the manufacturer's packaging.
