This fish is bypassed by some because of its specific smell, but if you cook it skillfully, the smell will disappear. First, choose the right silver carp first. Buy a carcass from 1.5 kg. In such individuals, meat is fatter and less bones. Pay attention to the eyes of the carcass. They should be transparent, without turbidity. Pink clean gills testify to the freshness of the carcass. The scales should be even, clean and shiny.

Note: I bought pre-cut steaks. Therefore, I did not clean the fish. If you have the opportunity, then ask the seller to clean the carcass, gut the insides and cut into steaks. If you do it yourself, then remove the gills with the eyes, cut off the fins with the tail, clean the scales and gut the insides. Rinse well under running water and pat dry with a paper towel.
