Step by step preparation of pork cutlets with prunes, recipe with photo:
1. Peel the meat from the film, cut off the veins and remove excess fat. If you like fatty foods, then leave a little fat. Peel the garlic and onion and rinse. Pass the meat and onions through the middle rack of a meat grinder, and squeeze the garlic through a press.
2. Pour semolina into the minced meat, beat in the eggs, season with salt, ground pepper and your favorite spices. I used dried parsley and ground ginger powder.
3. Stir the minced meat well and leave it to stand for 15 minutes to dissolve the semolina. Otherwise, in the finished product, it will grind on your teeth.
4. Wash the prunes, dry with a paper towel and cut into medium pieces. If you wish, you can twist it in a meat grinder.
5. Take a portion of the minced meat and form a small cake out of it. Put some prunes in the middle and drown it in the minced meat.
6. Cover the prunes with a small piece of minced meat. Take the patty in your hand and twist it to smooth out all the seams and give it a neat shape.
7. Pour vegetable oil into a frying pan and heat. Put cutlets in boiling oil and heat high. Fry them for 30 seconds until golden brown. This will preserve the juiciness of the product. After that, screw the temperature to medium mode and fry for about 3-4 minutes so that the patties cook inside.
8. Then turn them over and cook in the same way, first with high heat, then with medium heat. Serve ready-made products to the table directly from the pan, because cutlets are especially tasty when freshly cooked. Anything will go for a side dish, they go perfectly with all dishes.
