Tomato sauce is based on tomatoes. There is no arguing about how useful this vegetable is. The most beneficial ingredient in tomatoes is the antioxidant lycopene. It is a great helper in the treatment of cancer. Tomatoes are also full of vitamins that a person needs. These include: A, E, K, PP, group B. Tomatoes are also a wonderful source of large amounts of minerals such as potassium, magnesium, phosphorus, iodine, iron. They also contain very useful acids - tartaric and citric. At the same time, scientists have proven that the most useful fruits for humans are boiled.
As you can see from the above, tomato sauce is not only tasty, but also a healthy product, because contains many beneficial vitamins and nutrients. However, the same cannot be said for the industrial products that flaunt on store shelves. Indeed, it often includes flavorings, preservatives, dyes, and fresh tomatoes themselves are replaced with cheaper vegetable puree. Therefore, to be sure of the composition and quality of the product, you need to prepare such a sauce yourself. This is what we will do now.

Ingredients:
- Tomatoes - 500 g
- Onions - 1 pc.
- Garlic - 3 cloves
- Dried basil - 1 tsp (you can use fresh)
- Dried dill - 1 tsp (you can use fresh)
- Bay leaf - 2 pcs.
- Ground nutmeg - 0.5 tsp
- Ground black pepper - a pinch
- Red pepper - a pinch
- Salt - 0.5 tsp or to taste
- Vegetable oil - for frying
Step by step preparation of tomato sauce
1. Wash the tomatoes under running water and pat dry with a paper towel. Use a sharp knife to make cross-shaped shallow cuts in the fruit and place them in a deep bowl.
2. Pour boiling water over the tomatoes and leave to infuse for 15 minutes.
3. Then pour over the tomatoes with ice water and remove the skin. After the shock temperature (hot and cold water), they are very easy to clean up.
4. Meanwhile, peel the onion and garlic. Rinse vegetables under running water and chop finely.
5. Pour vegetable oil into a frying pan, and put onion and garlic to fry. Saute them over medium heat until transparent.
6. Cut the peeled tomatoes into 4 pieces, or smaller ones, and send them to the pan with the onions.
7. Boil the food, reduce the temperature to medium and simmer the tomatoes, kneading them with a mortar or spoon. They should be converted into a homogeneous smooth mass. After that, reduce heat to low, cover skillet with lid and simmer sauce for 10 minutes.
8. Then flavor the tomatoes. Add herbs, salt and spices.
9. Mix everything well and stir the sauce for 2-3 minutes. If it seems too thick to you, then dilute it with broth, tomato juice, dry wine or ordinary drinking water.
10. Transfer the prepared sauce to a bowl and store in the refrigerator for 2-3 days. Use it for pasta, salads, stews, borscht, etc.
