Ingredients:
- Pork - 600 g
- Spices and spices to taste
- Refined sunflower oil - for frying (I have a piece of bacon)
- Drinking water - 100 ml
- Ground hot pepper - a pinch
- White beans in tomato sauce - 500 g
- Salt - 1 tsp or to taste
Cooking pork with beans in tomato sauce step by step:
1. Place a cast iron or non-stick skillet over the fire and heat well. Put a piece of bacon or vegetable oil in it.
2. Melt the bacon until it melts completely. Discard the rest of the greaves from the pan.
3. Prepare the meat by this time. I have pork neck, but this is not necessary. For this dish, you can take pulp, low-fat sirloin, tenderloin, shoulder blade, ham, i.e. any boneless part of the mascara. Although the dish will be no less tasty with ribs.
Wash the pork with cold running water and absorb excess moisture with a paper towel. Cut it into small pieces, about 3x3 cm. Before slicing, remove excess fat and peel off the film. Transfer the meat to a well-heated skillet. Lay it out so that it lies in one even layer. Then it will be fried, and not immediately stewed. Do not cook meat immediately after removing it from the refrigerator. Leave it for 1.5-2 hours at room temperature.
To make fried pork in a frying pan more tender, you can first beat off the meat with a special hammer. The pork is beaten quickly and with little or no effort.
4. Fry the meat over high heat until it is browned on all sides and a golden brown crust forms. If there is a lot of meat in the pan, i.e. will lie with a mountain, then a lot of juice will stand out from the pieces and the pork will be less juicy. In this case, fry the meat in portions.
Roast the pork for the first 10 minutes over high heat, then reduce the heat to medium and continue cooking for another 10 minutes.
5. Salt, pepper and season the fried pieces of meat with your favorite spices. I used dried ground garlic, ground sweet paprika and ground nutmeg. Also, dried basil, hops-suneli, thyme, marjoram, rosemary, ginger, as well as mint are well suited here. If garlic is not available as a powdered spice, use a fresh press-pressed vegetable. Garlic will add great flavor and aroma.
6. Pour water into the pan so that it covers half of the pieces.
7. Bring the contents of the skillet to a boil.
8. Cover the pan with a lid, simmer and simmer the pork for 30 minutes until tender.
9. Remove the lid from the skillet and heat high to bring the meat to a boil.
10. The pork is almost ready, you just need to add the beans. Open a can of tomato-wrapped canned beans and place them over the meat. You can take white or red beans, it doesn't matter.
If you don't have canned beans, then boil them. To do this, soak it for 2-3 hours in cold water and drain the water. Place it in a saucepan, cover with fresh water and boil until cooked for about 1 hour. Add cooked beans to pork with a tablespoon of tomato paste. You can add sautéed carrots and onions.
11. Stir the food. Season with salt and pepper to taste, taking into account that the beans from the jar are already filled with salt and pepper. Bring to a boil and cover the skillet. Simmer the dish for 10 minutes over low heat. Control the amount of sauce, there should be enough. If you run out of liquid, add water or broth.
Serve pork and beans in tomato sauce for lunch or as a main course for dinner, garnished with chopped herbs. It is satisfying and can be eaten without bread.
