Prague cake: history
If you look at the history of this delicacy, it is clear from the name that it resembles the capital of the Czech Republic - Prague. But then it was made according to a very complex, time-consuming scheme with the use of a very large number of ingredients. Four types of buttercream were made for the Prague cake, which included cognac, Benedictine liqueur and Chartreuse. For the cakes, rum was added (more precisely, impregnation was made). Today, in fact, in the Czech Republic, such a cake is already absent in cooking, and on the territory of Russia, Ukraine and other neighboring countries it appeared thanks to the chef "Guralnik Vladimir Mikhailovich", the former head of the confectionery department of one of Moscow's restaurants - "Prague". Master pastry chefs from the Czech Republic came to Moscow to exchange experience and Guralnik V. M., based on the original recipe for the Prague cake, came up with his own, which has remained the basis of baking to this day. Ingredients:
- Flour - 2 cups
- Sour cream - 0.5 l
- Condensed milk - 760-800 g (2 cans)
- Sugar - 2 cups
- Eggs - 4 pcs.

- Vanilla sugar - 2 sachets
- Butter - 300 g
Cooking Prague cake with step-by-step actions and photos
1. Pour one can of condensed milk into a bowl and 4 tablespoons of cocoa, mix well. I mix everything with a mixer. 2. Add four eggs one by one and stir well after each until a homogeneous mass is obtained (if you mix with a blender, then it is better to do this at low speeds so that the dough does not foam too much). 3. Pour in 2 cups of regular sugar and one packet of vanilla sugar, mix everything again.
4. Add 0.5 liters of sour cream and stir again until smooth. Pour in two glasses of baking flour and 1 teaspoon of baking soda (previously slaked with vinegar) and mix thoroughly until a homogeneous mass is obtained, there should be no lumps. The dough will be medium thick, like a cake. 6. Pour half of the dough into a greased form (I have it with a diameter of 28 cm) and covered with parchment paper for baking. If there are two baking dishes, then you can immediately pour the dough and bake them together at a temperature of 180 ° C for 35-40 minutes, only preheat the oven beforehand.
7. Remove the finished cakes from the mold, tear off the paper and put on a wooden board, you can use a chopping board. Allow to cool, about 2-3 hours. 8. Now we are preparing the cream for the Prague cake. It is desirable to take the oil "rustic", real. If you use a store-bought packaged product, then take it with a fat content of at least 82%. I first took the butter out of the refrigerator and cut it into large pieces so that it becomes soft. Put it in a bowl and pour in a can of condensed milk. Beat with a mixer on high speed until smooth, until it feels like foam. 9. Add cocoa and vanilla sugar, beat generously until the cream is thick and fluffy. When tilting the bowl, it should not drain.
10. Now the task is to cut two cakes into equal halves. There should be 4 pancakes. 11. Next, put the first cake flat side down on the dish and spread the fourth part of the cream on top, distribute it evenly with a spoon. 12. On the first crust, greased with cream, put the second, grease, then the third, grease and the last.
13. Cover the fourth cake evenly with the remaining cream both on top and on the sides. Now it remains to decorate the Prague cake with any chopped nuts or chocolate chips. I bought a bar of dark chocolate and rubbed it on top. After that, the cake should be refrigerated for 2-3 hours. 15. Now you can serve it to the table.
