There are many ways to prepare duck dishes. The poultry is baked in the oven whole and chopped into pieces with and without filling. It is fried in a pan on its own or in company with vegetables, herbs and spices. All recipes require special attention, because the meat can be dry and tough. If you have never cooked duck before, then stewing or boiling is the surest way to cook it. Today we'll talk about the latter and make a spaghetti and egg soup in duck broth.
Spaghetti can be replaced with pasta or any other products: horns, bows, snails, noodles, etc. Egg, rice, soy or buckwheat noodles (aka soba) are also suitable. Eggs can be added hard-boiled, cut into quarters or halves and laid out as a decoration, separately on each plate. This is exactly what is suggested in this recipe. You can also finely chop the boiled egg, grind with garlic and pour into the broth. There are other options as well. For example, a couple of minutes before the soup is ready, break the shell directly over the saucepan and stir the raw egg quickly with a fork, so that one large lump does not form, and the small flakes spread on the surface. You can also shake a raw egg in a separate bowl with cream, sour cream, or soy sauce, then pour into a saucepan.

Ingredients:
- Duck - 0, 4 part of the carcass
- Onions - 1 pc.
- Spaghetti - 100 g
- Bay leaf - 2-3 pcs.
- Salt - 1 tsp or to taste
- Potatoes - 2 pcs.
- Eggs - 2 pcs. (at the rate of 0.5 eggs per 1 serving)
- Greens - any (optional)
- Ground black pepper - a pinch
Step by step cooking spaghetti and egg soup in duck broth, recipe with photo:
1. Wash the duck, scrape off the black tan on the skin, cut into medium sized pieces, put in a saucepan and cover with water.
2. Peel the onion, wash and send to a saucepan with meat.
3. Boil water and remove the foam that forms from the surface of the broth. Bring the heat to the lowest setting and simmer the broth under the lid for 1 hour. Then add the peeled and diced potatoes.
4. After 10-15 minutes add spaghetti to the soup. Season with salt, black pepper, bay leaf and peppercorns.
5. Continue cooking the soup until the spaghetti is done. The cooking time is written on the manufacturer's packaging.
6. When the soup is almost ready, add the finely chopped herbs to the saucepan. It can be fresh, frozen, or dried.
7. Dip the eggs in a saucepan and boil until a cool consistency. Then chill in ice water.
8. Eggs, shell and cut in half. Pour the prepared spaghetti soup in duck broth into portioned bowls and garnish with a boiled half of a boiled egg. Serve it with croutons or croutons.
