Outwardly, it turns out to be so attractive that it can undoubtedly be put on the festive table as the main one. As a side dish, you can serve any porridge, potatoes in any form, boiled vegetables. In addition, it is good to serve pickled mushrooms or cucumbers. It all depends on the preferences of the chef and the guests.
The basis of the dish is minced meat. Ideally fresh. For this recipe for meat nests with quail eggs, it is not allowed to use minced meat, which gives off a lot of liquid, because it is quite difficult to form nests from it. Moreover, when baking, they can creep over the baking sheet. Because of this, it is best not to use a commercially available frozen product. It is in it that there is a large amount of water.
In general, minced meat is made as for cutlets. For the bunch, we use a chicken egg, season with mustard, green onions, salt, pepper and your favorite spices. For filling and improving the taste, we also introduce bread crumbs.

- Minced beef - 300 g
- Breadcrumbs - 3 tablespoons
- Dijon mustard - 1 tsp
- Quail eggs - 8 pcs.

- Hard cheese - 50 g
- Salt and pepper to taste
Step by step cooking of meat nests with quail eggs
1. Before preparing meat nests with quail eggs, prepare minced meat. To do this, combine chopped pork and beef pulp with bread crumbs, Dijon mustard.
2. Finely chop the green onion feathers with a knife and, together with the chicken egg, add to the container with the minced meat.
3. Also add salt, black pepper and other seasonings as desired. Knead the minced meat with your hands until smooth. It should be pretty thick.
4. Before shaping, cover the bottom of the mold with paper or a heat-resistant silicone baking mat. Lubricate a little with oil. We moisten the palms in water so that the minced meat does not stick. We divide the meat blank into equal parts and first form a ball from each, then put it on a prepared baking sheet and form nests, making grooves in the center of each ball.
5. Put in the oven for 20 minutes at 180-200 degrees. Sprinkle a little with grated cheese.
6. Drive one egg into the nests so that it does not flow out. We put in the oven for another 10 minutes. We take out and carefully lay out on a dish.
