Tips for making delicious dumplings
- Squeeze the cottage cheese well before cooking, then less flour will be required.
- Use fresh curd and never sour. Otherwise, dumplings will never be tasty, and sugar cannot hide the sourness of stale cottage cheese.
- Before cooking, it is advisable to wipe the cottage cheese through a sieve, or beat with a blender, then the dough will be homogeneous and tender. But if you like to feel small curd lumps, then you don't have to.
- The flour is added gradually so as not to overdo it. Otherwise, you get boiled buns, not cottage cheese dumplings.
- The dumplings are not boiled for a long time, otherwise they will boil, especially if there is little flour in the dough.
- Give all the dumplings the same shape so that the cooking time does not differ.
- Dumplings should be cooked only in boiling water and in large quantities.
- After lowering the dumplings into the water, they are immediately mixed so that they do not stick together in one whole lump and do not stick to the bottom of the pan.

Cooking chocolate curd dumplings
1. Place dry granular curd in a container and mash it with a fork. Add sugar and beat in an egg. It is advisable to choose cottage cheese fatter and drier, then the dumplings will be tastier. If the curd is very watery, be sure to squeeze the excess moisture out of it.
2. Add a pinch of salt, flour and cocoa powder to a bowl. Introduce flour little by little, so as not to overdo it. I draw your attention to the fact that if you haven't squeezed moisture from the cottage cheese, then you will have to add more flour to the dough, which will make the dish more high-calorie.
3. Knead the dough well until smooth, kneading all the lumps. A blender can be used for this process. The consistency of the dough should be soft, and it should not stick to your hands. If the dough continues to stick, add a little more flour.
4. Sprinkle a plate with flour, put the dough on it, which is rolled out with long sausages.
5. Cut the resulting curd sausages evenly into small pieces, about 3 cm in size.
6. Pour drinking water into a saucepan, bring to a boil and alternately lower the dumplings to cook, then immediately mix them well so that they do not stick together. As the dumplings float to the surface of the pan, remove them from the water with a slotted spoon and put them on a plate, sprinkling with sugar or greasing them with butter. Serve hot chocolate curd dumplings with sour cream, condensed milk, or hot chocolate.
