Step by step preparation of chocolate lazy dumplings:
1. Pour the curd into a convenient bowl and add the sifted whole wheat flour. You can add starch or semolina instead of flour. To make the dumplings more homogeneous and tender, first grind the cottage cheese through a fine sieve or mash with a blender. Depending on the quality of the curd, the amount of flour (semolina / starch) may vary. The suggested proportion works perfectly with my curd. It is not the amount of flour introduced that is important, but what mass should be obtained. Of course, the less flour in the dough, the better. But this primarily depends on the curd itself. If the curd is wet, then you will have to add more flour. Or, to use less flour, first remove the whey from the curd. To do this, put it in cheesecloth and hang it for several hours to drain excess moisture. The most correct cottage cheese for lazy dumplings is a little dry and by no means sour. Since no matter how much sugar you put in the dough, it will not hide the sourness of the curd.
2. Next, add sifted cocoa powder to the products. If it's sweet, adjust the amount of sugar.
3. Add sugar and add vanilla sugar if desired.
4. Season food with a pinch of salt. Knead the mixture with a fork until smooth.
5. Beat in an egg.
6. Stir the dough well to distribute the egg evenly throughout the mixture.
7. Put the dough on the table sprinkled with flour. For convenience, divide it into 2-3 pieces and roll them into thin sausages about 2-3 cm wide in diameter.
8. Flatten each sausage slightly and cut into small pieces, and lightly coat each piece in flour to smooth the open sections. Make the dumplings the same size so they cook evenly.
9. Pour water into a saucepan. It should be enough to prevent lazy dumplings from sticking to the bottom and to each other. Salt it lightly and bring to a boil. Dip one dumpling in boiling water.
10. When all the dumplings are placed in a saucepan, stir them so that they do not stick to each other. You can put some vegetable oil in a pot of water. Then the dumplings will be tastier, and are guaranteed never to stick to the bottom, because they will be covered with a thin film of oil. Then you definitely do not have to injure them once again with a slotted spoon. After all, while they are raw, they are very delicate and pliable, so it is easy to damage them.
11. When the water with the dumplings boils, mix them gently again. After 30 seconds, they will float to the surface, then cook them for 1 minute. If the proportions of flour and cottage cheese are observed in the dough, then with longer cooking, lazy dumplings will begin to boil. Therefore, after exactly a minute, remove the dumplings with a slotted spoon, chicken them a little so that all the liquid is glass and put on a plate.
No dumplings are delicious without butter. So while they are still hot, add a piece of fresh butter to them and stir. And when it melts completely, serve chocolate lazy dumplings with sour cream, jam, condensed milk, maple syrup, nutella.
