Stuffed eggs are a cold appetizer that is usually cooked in one bite. It is for this reason that the recipe is so popular. Such an appetizer is prepared for a festive menu, a buffet feast, and, of course, for a home family dinner. Any culinary specialist will successfully cope with stuffing eggs, incl. and beginner. It is only necessary to boil hard-boiled eggs, peel them from the shell so that the white remains beautiful, then cut them in half, extract the yolk, and fill the cavity with the filling.
You can always experiment with egg fillings. For example, the simplest filling is beet puree, the most generous is red caviar. In this recipe, I suggest using duck meat for the filling. It is very healthy, tasty, satisfying, and most importantly affordable from the financial point of view, and such an appetizer is suitable for any occasion. Although any kind of meat can be used as a filling, dietary chicken or rabbit will do, as well as pork or offal. It is important that no matter what minced meat is chosen, the appetizer will always be the main one on your table. Experiment, fantasize, cook, and your guests will be delighted.

Ingredients:
- Duck meat - 2 fillets
- Eggs - 7-8 pcs.
- Onion - 2 pcs.
- Garlic - 4 cloves
- Carrots - 1 pc.
- Bay leaf - 3 pcs.
- Allspice peas - 4 pcs.
- Salt - 1 tsp or to taste
- Ground black pepper - a pinch
- Vegetable oil - for frying
Cooking eggs stuffed with duck meat
1. Cut the duck carcass, or buy ready-made duck breasts right away. Remove the skin from them and wash under running water. Combine meat, one peeled onion, a couple of garlic cloves, bay leaf and peppercorns in a saucepan.
2. Cover the food with water and boil the duck until tender. Yes 10 minutes until tender, season the broth with salt and black pepper. Boiling time for poultry will take about an hour. Remove the cooked meat from the pan and cool slightly so as not to burn yourself.
3. While the poultry is cooking, peel and chop the second onion, garlic cloves and grate the carrots.
4. In a skillet in vegetable oil, fry the vegetables until golden brown.
5. Dip the eggs in a saucepan with cold water, place them on the stove and after boiling, boil them for 10 minutes. Then immediately immerse them in ice water. In addition to the fact that they cool down this much, it will be even easier to clean them, while the proteins will remain smooth and beautiful. After you remove the shell from the cooled eggs, cut them in half and remove the yolks.
6. Twist the boiled meat, fried vegetables and egg yolks in a meat grinder with a medium wire rack.
7. Pour in a little duck broth, in which the meat was cooked, to the products and mix well. Taste the snack and adjust with salt, pepper and spices as needed. You can also use fresh herbs as a seasoning for the filling - dill, tarragon, basil, parsley or thyme. The consistency of the filling should not be too tight, but not very liquid either. Therefore, pour in the broth gradually, so as not to overdo it.
