Mannik is a true culinary miracle. It is easy to prepare, the ingredients are available, it always rises, it looks like a biscuit, the aroma is amazing … Its classic recipe is semolina and kefir. But in this recipe, the main ingredient remains, and kefir is replaced with butter and zucchini juice. In addition, orange zest is added here, which gives a citrus note. Well, the zucchini itself is not felt at all in the dish. It only adds extra vitamins, trace minerals and satiety.
For all its simplicity, manna turns out to be tasty and tender, and it will take a minimum of effort and time to prepare it. Semolina here completely replaces flour, which makes the product not so "capricious" and always rises successfully, becomes fluffy and light. And if you want, turn an ordinary manna into a birthday cake, then divide it in half into 2 cakes and coat with any cream, and decorate it with icing, nuts or sprinkles on top.

Ingredients:
- Zucchini - 1 pc. medium size
- Honey - 2 tablespoons
- Butter - 100 g
- Semolina - 100 g
- Orange zest - 1 tablespoon
- Baking soda - 1 tsp
- Eggs - 2 pcs.
- Salt - a pinch
Cooking manna with zucchini and orange zest
1. Peel the zucchini and remove the seeds. This should be done even if the vegetable is young.
2. Grate the zucchini on a coarse grater.
3. Transfer the zucchini shavings to a deep kneading bowl and add semolina, orange shavings, honey, baking soda and salt to it.
4. Place the butter in a deep bowl.
5. Melt butter in a microwave or water bath. At the same time, watch it so that it does not boil. It will be enough just to melt it.
6. Pour the melted butter into a bowl with all the ingredients.
7. Stir the mixture and leave for half an hour to swell the semolina. Otherwise, if you do not stand it, then grains of it will be felt on the teeth.
8. After this time, pour the yolks into the mass and stir in.
9. Place the whites clean and dry and beat them with a mixer until peaks and the formation of a white airy mass. Put them in the dough.
10. Knead the dough several times in one direction to distribute the proteins evenly. Do this carefully so as not to overthrow them.
11. Line a baking dish with parchment, greased with butter and place the dough in it.
12. Send the cake to a heated oven up to 180 ° C and bake it for 40-45 minutes. Check readiness with a wooden straw - it must be dry. If there are lumps adhering, then increase the baking time.
13. Cool the finished cake without taking it out. When it reaches room temperature, remove from the mold, put on a dish, cut into portions and serve.
