Summer is generous with berries and fruits. I want to eat more and more, but alas, the berry season is short. How to make a stock for the winter, for example, from strawberries? We suggest you roll up the compote for the winter without sterilization. Strawberries are one of the first summer berries. Sweet, aromatic, delicious. Who can resist? Since not everyone has freezers for freezing, we will preserve compote.
We advise you to first eat up this wonderful berry, then boil the jam. But when you collect small, but the most fragrant berries from the beds (or buy on the market), then it's time to roll up the compote.

- Water - 2 liters
- Strawberry - 800 g
- Sugar - 200-300 g
Step-by-step preparation of strawberry compote for the winter without sterilization
First of all, we will prepare the banks. They must be thoroughly washed with baking soda and rinsed with running water. There is no need to sterilize additional jars. But sterilize the lids by boiling them for 5 minutes.
Now my strawberries. Pour strawberries into a bowl and cover with plenty of water. Leave it for 5 minutes, after the indicated time, drain the water and rinse the strawberries under running water.
We remove the sepals and put the berries in jars. We put 400 g of strawberries in each jar.
Bring clean water to a boil and fill the jars to the very top.
We leave the jars for 15 minutes, covering with a lid. After 15–20 minutes, pour the water from the cans into the saucepan, which has already become colored and has taken on a strawberry aroma. Add sugar. Note that you may need more or less sugar. Try it to your taste.
Bring the drained water with sugar to a boil and refill the jars.
We immediately close the jars with lids. We turn the cans upside down to check the tightness, and wrap them until they cool completely.
We store ready-made strawberry compote for the winter in a dry and dark place for no more than two years.
