In the summer, every summer resident collects fragrant and fresh tomatoes from the garden. Others buy them on the market at a very cheap cost. We first eat them in salads, then we cook stews, canning, pickling, etc. Today is the time to freeze them. Freezing is a popular homemade preparation method. It allows you to easily preserve the taste and beneficial properties of vegetables and fruits as much as possible.
You can freeze whole tomatoes, cut into slices, cubes, slices, and even as juice or puree. Depending on where they will be used when thawed. And they are added to pizza, salads, pies, casseroles, vegetable sautés, stews, borscht, soup, gravy, sauce, etc. Today it is already impossible to imagine many dishes without them.
You can freeze any varieties of tomatoes. But best of all for this is cherry, cream, de barao. It is not necessary to choose the most beautiful fruits. The main thing is that they are ripe, soft, fleshy and juicy. For example, cutting into cubes or slices requires strong, dense tomatoes, they have a lot of pulp and practically no juice. Cooking frozen tomatoes step by step:
1. Select strong, not overripe, without signs of disease, wormholes and various damage to tomatoes. They should be firm with a whole skin. Wash them well in running water, lay them on a towel and wait until dry. Then cut into rings about 5-7 mm thick.
2. Find a plank that will fit in your freezer and wrap it with cling film or parchment lining. Arrange the tomato rings in one row so that they do not touch each other. Send them to the freezer for a few hours using the intense quick freeze. But the freezing time depends on the camera's ability to freeze food.
3. When they are well frozen, take out the tray and put the tomatoes in a bag, removing air from it as much as possible, and tie the bag. It is good to use special bags for freezing. Place the fruits packed in this way in the freezer for further storage. Keep frozen tomatoes at -18 ° C for 8-10 months. Store the workpieces at a higher temperature for 3-4 months.
