In this recipe, they are supplemented with fresh vegetables, which, together with blue ones, will give the dish an amazing taste. Ingredients:
- Eggplant - 1 pc.
- Vegetable oil - for frying
- Radish - 100 g
- Cucumbers - 1 pc.
- Hot pepper - 0.5 pods
- Salt - 0.5 tsp or to taste
- Soy sauce - 2 tablespoons
- Tomatoes - 1 pc.
- Olive oil - for dressing
- Apples - 1 pc.
- Onions - 1 pc.
- White cabbage - 100 g
Step by step preparation of salad with fried eggplant, fresh cabbage, tomatoes and radish, recipe with photo:
1. Wash the eggplants, dry with a paper towel and cut into half rings. Heat vegetable oil in a skillet and fry them until golden brown on all sides. If the fruits are ripe, then the bitterness must first be removed from them. To do this, sprinkle the sliced eggplant with salt and leave for 30 minutes. Then rinse with running water and wash off the secreted juice, with which all the bitterness came out. In order not to do this, use young milk eggplants with small seeds and thin peel for the recipe.
2. Chop the white cabbage into thin strips, sprinkle with salt and crush with your hands so that it lets out the juice.
3. Wash the tomatoes, dry and cut into cubes or wedges.
4. Peeled onions, cut into thin half rings. Peel and chop the garlic. Remove seeds from hot peppers and chop.
5. Wash cucumbers and cut into thin half rings.
6. Wash the radish and cut into half rings thinly.
7. Wash the apple, remove the seed box with a special knife and cut into strips.
8. Place all food in a deep bowl.
9. Season vegetables with salt, drizzle with soy sauce and olive oil. Toss the salad with fried eggplants, fresh cabbage, tomatoes and radishes and serve immediately after cooking.
