As you know, cabbage soup is a Russian dish that has firmly won the love of ordinary workers, and then passed on to the tables of the nobility. Usually cabbage soup is cooked with beef, but we are simple people, we can replace it with pork or chicken, of your choice. For a delicious meal with a minimum of calories, cook in vegetable broth.
For the preparation of this first course, early varieties of cabbage are used. But you can take the later one, so it is denser with white sheets. In winter, cook cabbage soup with sauerkraut.
To add a red color to the cabbage soup, we will add not only tomatoes (more for flavor), but also some tomato paste. Nevertheless, with it, the dish turns out to be richer in color.

Ingredients:
- Water - 3 l
- Meat on the bone - 400 g
- Cabbage - 400 g
- Onions - 1 pc.
- Carrots - 1 pc.
- Tomatoes - 200 g
- Tomato paste - 1 tbsp l. (optional)
- Salt to taste
- Potatoes - 400 g
Step by step cooking cabbage soup with fresh cabbage and tomatoes
First, let's prepare the broth. Fill the meat with cold water and put on fire. As soon as the water boils, reduce the heat and salt the broth to taste. You can add laurel, black or allspice peas.
While the broth is boiling, prepare the frying. For this we need onions, carrots and tomatoes. Cut onions and carrots into cubes or strips. But the tomatoes first need to be doused with boiling water, having previously made cuts on them. Then remove the skin and cut the tomatoes into cubes.
Heat some vegetable oil in a frying pan and spread the onion. We pass it for 3 minutes, add carrots to it. We pass for another 3 minutes.
Now you can add the tomatoes and tomato paste. We pass together for 5 minutes.
Cut the potatoes last when the broth is ready.
Remove the meat from the finished broth and cut it off the bone. Put it back in the broth. We send the potatoes to the pan.
When the broth boils, add the cabbage and immediately put the fry behind it.
Cook the cabbage soup for 20 minutes over moderate heat. Salt and pepper to your liking. We serve cabbage soup hot or cold with a crust of black bread and with a budget. Greens, garlic will enrich the taste of cabbage soup. Bon Appetit!
