Pumpkin is a versatile vegetable. It is both healthy and tasty. Serves as the basis for both dessert and main dishes. In addition, the product is sold at any time of the year, and it is very cheap in both summer and winter seasons. For salad, pumpkin is either boiled or baked in an oven. The taste of the finished dish depends entirely on the pumpkin variety. However, in general terms, the vegetable should be slightly sweet. And even if it is added to the main course, and not to a sweet salad, do not be intimidated by the sweetness - it will only add a little piquancy to the dish.
Whichever method of cooking pumpkin is chosen, it will be delicious in any form. In addition, all pumpkin salads are very beautiful in appearance, have an original taste and contain many vitamins such as group B, carotene, K salts, magnesium, and iron.
Additional ingredients for a sweet salad can be very different. So, pumpkin is in perfect harmony with prunes, dried apricots, apples, banana, raisins, nuts, chocolate, coconut, grapes, quince, etc. Sweet salads are also seasoned with many sauces from vegetable or pumpkin oil, yogurt, lemon juice, soy sauce …

Ingredients:
- Pumpkin - 300 g
- Walnuts - 100 g
- Raisins - 100 g
- Cognac - 50 ml
- Lemon juice - 30 ml
- Honey - 1 tsp
How to make a warm sweet pumpkin salad:
1. Peel the pumpkin, remove the seeds and fibers, cut into medium-sized cubes and place in a baking dish. Cut it into slices, which you will later serve to the table.
2. Heat the oven to 180 degrees and send the pumpkin to bake for 15-20 minutes. Determine its readiness by softness. Pierce the pulp with a toothpick, it should easily fit into the vegetable. You can also boil the pumpkin, or it is better to steam the pieces without the peel in hot water, covering the pan with a lid. Then it will be soft on the outside and crispy on the inside.
3. Meanwhile, wash the raisins and pat dry with a paper towel. Fold it into a deep container and fill it with cognac. Leave it on all the time until the moment of its further use.
4. Crack the walnuts from the shell. Lightly prick the kernels in a clean, dry skillet.
5. Choose serving bowls or you can serve the salad in one large bowl. Place a serving of the baked pumpkin on a platter.
6. Top with roasted nuts.
7. Spread the food with raisins.
8. Cognac, in which the raisins were soaked, combine with lemon juice and honey.
9. Stir well to form a homogeneous liquid mass.
10. Pour the prepared sauce over the salad and serve. You need to cook everything quickly so that the pumpkin and nuts are still warm when serving. Such a salad with its yellow pumpkin will definitely delight the eyes of your guests.
