Blueberry pancakes are a real tasty summer breakfast or afternoon snack. Fragrant, tender and not sugary pancakes will cheer you up and saturate for a long time. Their porous-airy taste is sure to please both children and adults. According to this recipe, pancakes can be prepared from fresh or frozen berries. Frozen fruits must first be defrosted in order to drain the juice. Berries can be added to the dough intact, finely chopped into pieces or grated into a puree. And if there are no blueberries, then currants, blueberries, strawberries, cherries or other sweet berries will boldly replace them.
Pancake dough is usually kneaded with kefir. However, no less tasty pancakes are obtained with fresh sour cream, milk, yogurt and other fermented milk products. Soda should be added to the recipe for such pancakes. It reacts with acid and gives the products splendor. Serve pancakes on kefir with blueberries ideally with hot tea or cold milk. In addition, pour over deliciously prepared pancakes with maple or chocolate syrup, or honey. Although, if you just sprinkle them with powdered sugar, it will be no less tasty.

- Flour - 1 tbsp.
- Blueberries - 100 g
- Kefir - 1 tbsp.
- Baking soda - 0.5 tsp
- Sugar - 2-3 tablespoons or to taste
- Vegetable oil - 3 tablespoons
- Eggs - 1 pc.
- Salt - a small pinch
Step-by-step preparation of pancakes on kefir with blueberries, recipe with photo:
1. Pour kefir at room temperature into a container for kneading dough. This is important, otherwise the soda will not react with it and the pancakes will not be so fluffy and tender. Therefore, remove the kefir from the refrigerator in advance so that the kefir has time to heat up.
2. Add soda to kefir.
3. Stir the kefir well. When it reacts with soda, it begins to foam, expand in volume and bubbles form on the surface.
4. Pour flour into kefir, sift it through a fine sieve so that it is enriched with oxygen. This will make the pancakes more tender.
5. Stir the dough with a whisk or blender so that there are no lumps and add the eggs.
6. Stir well again and pour in the vegetable oil. Adding it to the dough will allow you to fry the pancakes in a pan with little or no oil.
7. Wash the blueberries, dry with a paper towel and place in a fine sieve.
8. Grind the blueberries to a puree consistency and add to the dough. Although, if you wish, you can add it with a whole berry. It's a matter of taste.
9. Knead the dough well. Its consistency will be like thick sour cream.
10. Preheat the frying pan well and spoon out the dough with a tablespoon. It will spread a little over the pan. If you want the pancakes to be very fluffy and tall, then double the amount of flour. But keep in mind that then the pancakes will be more high-calorie. Fry the pancakes on kefir with blueberries on both sides until golden brown, about 2 minutes each.
