For breakfast, you can make hearty and delicious semolina pancakes. If you add fruit to the dish, then the pancakes will acquire wonderful and healthy taste notes. For breakfast, such pancakes are what you need, with a cup of tea or coffee it will turn out perfectly. This is the perfect hearty morning meal for the whole family! Such pancakes can be served with any toppings: with sour cream, syrup, jam or any sweet berry sauce. You can also serve fruit or decorate with chocolate chips.
The peculiarity of these pancakes is that the fruits are not grated, but cut into large pieces with a knife! The recipe uses sour cream, instead of which you can take cream, milk or kefir. Only there should be a little less of them, otherwise the dough will turn out to be more liquid. You can take half and half milk with sour cream. You can safely add cinnamon and vanilla to the dough. These spices go well with pears. Although you can use apples instead of pears, they also work in harmony with these spices. But baking powder and soda are not needed in the recipe, since whipped proteins will give the pancakes splendor. Semolina makes the pancakes more fluffy, although you can use wheat or oat flour instead.

Ingredients:
- Semolina - 100 g
- Ground cinnamon - 1 tsp
- Vegetable oil - for frying
- Pears - 2-3 pcs.
- Sour cream - 100 ml
- Eggs - 1 pc.
- Sugar - 50 g or to taste
Step by step preparation of pear pancakes with semolina, cinnamon and whipped proteins, recipe with photo:
1. Place the sour cream in a mixing bowl.
2. Add egg yolks to the sour cream, and send the whites into a clean and dry container without a drop of fat and water.
3. Stir the sour cream and eggs until smooth.
4. Add semolina and sugar to the dough.
5. Stir the dough until smooth and leave for 15-20 minutes to swell the semolina. Otherwise, in the finished dish, it will crunch on the teeth.
6. Then add ground cinnamon powder to the dough and stir until smooth.
7. Add a pinch of salt to the proteins and beat them with a mixer at high speed until they become stable peaks, white and airy foam.
8. Insert the whipped egg whites into the dough and knead gently in one direction to prevent the protein foam from settling.
9. Wash and dry the pears with a paper towel. Remove the core with a special knife and cut the fruits into rings of 0.5-0.7 mm.
10. Dip the chopped pears into the dough until they are completely covered with the dough.
11. Pour vegetable oil into a frying pan and heat it well. Place the pancakes on the bottom of the pan and fry over medium heat until golden brown, about 1-2 minutes.
12. Flip the fruit cakes over and continue frying for another 1-2 minutes until golden brown.
13. Put the finished pear pancakes with semolina, cinnamon and whipped egg whites on a paper towel so that all excess fat is absorbed into it. Then serve the food to the table with any sauces and additives.
