For a piquant taste, fish can be baked with garlic and herbs, or with carrots, bell peppers, onions and tomatoes.

1. Defrost the mackerel a little. Then cut off the head, tail, remove the entrails and divide into fillets. Wash it under running water and pat dry with a paper towel.
