A simple and absolutely accessible recipe for baking stuffed mackerel in foil. Even a novice hostess can please a family with such a dish.

Mackerel is a fish well known to us since Soviet times: canned mackerel in oil, cold and hot smoked mackerel, fresh frozen. Fresh frozen, which we will use, cost 78 kopecks. Nowadays, such a fish is much more expensive, but it is still loved and revered for its taste, almost complete absence of bones and ease of preparation. The proposed recipe also does not require certain culinary skills; even a novice housewife can bake mackerel in foil.

  • Caloric content per 100 g - 166.6 kcal.
  • Servings - 3-4 pcs.
  • Cooking time - 1 hour

Ingredients:

  • Fresh frozen mackerel - 2 kg
  • Carrots (medium) - 2-3 pcs.
  • Onions (medium) - 6-7 pcs.
  • Salt - 1 tablespoon (it is better to take a regular large one, you can iodized one)
  • Sunflower oil - 2-3 tablespoons
  • Ground black pepper - a pinch
  • Hmeli-suneli
  • Baking foil

Cooking mackerel in foil:

When choosing fish in a store, choose carefully. Today, in almost all stores, they are trying to deceive us, so make sure that the fish is not yellow, because this is the first sign that it is a hundred years old at lunchtime, and that there is not a lot of ice on it, because you do not have to pay money for it.

Make hops-suneli, although many people prefer to use ready-made seasoning for fish, but it is better to do it yourself by mixing the spices that you prefer, since the composition in ready-made mixtures raises suspicion: there can be anything but the spices themselves.

1. First of all, you should prepare the fish: cut off the fins, remove the entrails, wash thoroughly in cold water, removing all films. The head may not be cut off, but the gills are necessary: then, when you stuff the fish with vegetables, it is the head that will not allow them to fall out. Rub clean fish inside and outside with a mixture of salt and seasoning and leave to soak for a while. Photo 1

2. While the fish is absorbing the salt and aromas, peel the onions (learn about the beneficial properties and calorie content of carrots) and carrots. Cut the onion into half rings, grate the carrots, mix the vegetables together, pressing lightly so that they let the juice out. Photo 2

3. Line a baking sheet with foil, sprinkle the foil with sunflower oil: this will help to avoid burning. Arrange the fish and stuff with the vegetable mixture. If vegetables are left over, they can be placed on top of the fish or in between. Photo 3

4. Sprinkle the mackerel and vegetables with sunflower oil again and cover the baking sheet with a layer of foil. Send it to the oven for half an hour, and then pull out and remove the top foil. The fish must be sent back to the oven to obtain an appetizing crust even more. Then turn off the oven and leave the fish in it for 10 minutes.

Easy to prepare, but very tasty and healthy dish is ready. It is also wonderful because absolutely everything is suitable as a side dish: mashed potatoes, buckwheat or rice porridge. Or you can do without a side dish at all, only in this way the results of your culinary labors will be "destroyed" much faster!
