Before proceeding with the preparation of the cakes, be it envelopes, tubes, bags or knots, I want to note that before baking pancakes, you need to learn a few rules, following which you will get a real Ukrainian dish.
- When preparing the dough, it is better to introduce flour gradually, or initially use it in a small amount, and then add it. This is necessary so that the patches are not too dense. The texture of the pancakes will indicate an excess of flour - not soft, not elastic and slightly dry. In this case, it is worth adding milk.
- Despite the strict recipe for making pancakes, it must be remembered that wheat flour can be varied - one is viscous, the other is not very. Therefore, more than one recipe for handpieces cannot be universal. After baking the first pancake, you need to understand what is missing in the dough.
- Pour a moderate amount of dough into the pan while baking pancakes. Thick patches will not have a delicate taste and they will be impregnated with the filling much worse.
- All products used for making pancake dough, as well as for pancakes and pancakes, should only be at room temperature. Therefore, they must be removed from the refrigerator in advance and heated if necessary.

- Wheat flour - 1 glass
- Milk - 2-2, 5 glasses
- Egg - 1 pc.
- Refined vegetable oil - 2 tablespoons
- Sugar to taste

- Cottage cheese - 500 g
- Plums - 250 g
Cooking cottage cheese stuffed with plums
1. Sift the wheat flour through a sieve so that it is enriched with oxygen and the pancakes are thin and tender.
2. Beat in an egg and pour in refined vegetable oil. Optionally, for the tenderness of the leaflets, you can add eggs separately beaten with a mixer to the dough. Also add a pinch of salt and sugar to taste.
3. Pour room temperature milk into the dough.
4. Knead the dough until smooth. To do this, you can use both a regular hand whisk and a blender.
5. Heat the pan, before baking the first pancake, grease it with butter; when frying the subsequent cakes, this is not necessary. Pour a portion of the dough into the pan and swirl until the dough spreads completely.
6. Fry the pancakes on both sides until golden brown, about 2-3 minutes each. Look at the consistency of the first pancake, whether everything suits you - the pancake is thin, elastic, and does not tear. If you notice such problems, add some milk.
7. While the pancakes are cooking, prepare the filling. To do this, wash and dry the plums. Remove pits and cut into medium sized cubes.
8. Place cottage cheese, sugar and plums on a plate.
9. Stir the filling well, if necessary, correct its taste with sugar.
10. Turn the pancakes upside down and put a portion of the curd filling in the middle.
11. Wrap the pancake with an envelope and follow the same procedure with all the rest of the rolls. You can serve these pancakes with honey, sour cream, sweet jam, or pour them melted chocolate and caramel.
